Any apps that turn phone into extraneous PC display?

Are there any android apps that allow the phone to become a simple display for various information? I mean something similar in function to the Logitech G15/19 keyboards.

[Q] Drawbacks to disabling common services?

I'm not sure exactly where best to ask the question, but hopefully I can communicate my intent clearly enough. I'm a programmer and android is still fairly new to me, as I've done mostly Windows and a little Unix programming for most of my career, so I'm curious of a few aspects that I'm not so familiar with.
The gist of my question is really dealing more with some of the nuts and bolts of an android installation I suppose? I'm really trying to learn more of the guts of android and a
In using my Nexus I don't use Bluetooh, or NFC, or 99% of the widgets that get installed, I know there are a ton of tools out there that allow you to manipulate and see various aspects of the system, such as intents running services, etc...
If I turn off NFC and Bluetooth in the settings panel, I still see bluetooth and NFC tasks running in the system. What would be the resulting effect if I took a tool such as "NoBloat" and disabled Bluetooth and NFC?? Would there be any performance gain/degradation? Would I also have to use a tool and disable all Bluetooth intents?
Is there a tool to modify an app's permissions, for example, is there a way to modify YouTube/Google Music/Gmail etc wanting to start at boot, or an app's desire to keep the tablet awake, and again, what would be the benefit/detriment of it?
I've used a few tools, AutoStarts, NoBloat, Greenify, etc... but really want to know more about the system impacts etc...
And if it's a stupid question... at least be gentle!

Sleep tracking / Google Fit?

Has anyone had any success with apps like Sleep as Android that can sync with Google Fit working with their standalone watches? The Y3 supposedly has the ability to track sleep but there's no built-in app for it and while the Sleep app can be installed on the watch, it doesn't seem to share data with the phone version, at least not without just using one or the other and just syncing the data to SleepCloud.

Enable WiFi for specific Apps

Is there an easy way to create a shortcut / script that will enable WiFi when running Waze or G-Maps, but not other apps ?
Alternatively is there an easy way to prevent the Joying from "calling home" and potentially sharing my passwords & phone numbers with China ?

Any idea on whether this is a thing with these units? Thought it was only that certain phone manufacturer that was busted..

Yulu E10 Plus - Auto Start Apps/Alexa

I currently have the Yulu E10 Plus for F150. My specifications are attached. I have an Alexa Auto that works well with the device, however, in order for it to connect the Alexa app requires it is open. I wanted to automate the opening of the Alexa app, however, there appears to be no native way to do it. I tried using an app like Tasker or Automate but it has a couple of problems.
1. The device kills all apps that the user opens when it sleeps or restarts.
2. Accessibility settings are turned off after each sleep/reboot.
I wanted to root to whitelist certain apps but there does not appear to be solid information on how to accomplish that for this model of head unit. It does have the UIS7682 CPU but none of the information I have found in the forums covers that along with the specific MCU and System version. Want to be sure as to not brick my device.
Wondering if anyone has advice or experience with this type of head unit.
Thanks in advance!

First you could check if your device has the option to auto start the navigation app and if you can set another app as navigation app.
