@maxpaynezm is correct. If your device is on 3.1 you are on bootloader 2. One UI 3.0 (or lower) is on bootloader 1,. You cannot downgrade bootloaders

I think the new kernel brings bug-
fixes and security patches.Porting it should be much less difficult then porting Android 4.0.3 but you really need someone like mercellusbe with a fair bit of lnowledge in C

[Q] ICS Kernel Version?

I was under the impression that the 3.0 kernel was a pretty core part of the ICS update. However, the 4.0.3 update still have the 2.6.39.4 kernel on my tablet.
Is this because the update has gone slightly wrong, or has Acer kept us on 2.6 for some reason (like some other manufacturers)?

I would personally stick CM13 or any other AOSP/AOKP ROM (DU is good) and de journalise the file system and set Trimmer to daily. Check the CM13 thread for instructions. Those settings never failed and I've been running them for 2.5 months and before slowdown occured after a few days, even with official firmware (5.1.1)

In general, you should not facing any improvements or differences by flashing the lollipop bootloader over the kitkat one. CMIIW
the LP bootloader should be capable of running a 64bit OS rather than a 32bit running on a KK BL.I have not checked the arch type of lollipop builds so i cannot comment on that subject.
