So I normally use CM because I am all about having my phone themed. But due to wanting to use some of the Samsung apps like fingerprint scanner I have to use a touchwiz based rom.

Give AllianceRom by @Goldie a try, tons of themes, huge amount of options, there are even cm style themes. If you think cm had Alot of choices, this has as Many or more.
And if it's not enough, you can always do the hard work of themeing your self.
No you can't use cm zip theme in a tw rom.

Thanks started using this rom, did a little theming with the settings it has, you said I could make my own, do you mean I could theme like CM where I could theme other apps also like the play store youtube ext? I'm trying to find some tutorials on theming everything and so far only found theming the dialer.

I use these and they are very good, I was also just saying you would have to learn to theme on your own if Aliance is not enough. Glad you like Alliance. Make sure you read Alliance op carefully as you have to place things correctly to get proper results.

Because if you put some widgets on it it becomes slow, not like LauncherPro. I don't have sense i'm on Froyo (Defrost 1.4). I restored with it with Rom-Manager.

If i want test it on my custom rom based on sense, after how can i restore the sense?
do a nandroid backup (in recovery mode) before flashing this, and restore that very backup if you want to go back.

Seems pretty good, but I would rather just see some more screens than reinstalling my rom etc.

If you don't like it, it is very easy to remove. I like it. Takes a bit of organising to get it to look how you want it o.

I actually get FC's in browser on certain websites. Thought it as rom-problem, but perhaps not.

I sort of thrown my own rom together using Defrost as a base. It's Galaxy S styled *sort of*.

This actually looks amazing. Does the rom include the Defrost setup app to download the ocuv or is it preinstalled?

Defrost setup is already included as it is part of the base rom. Rom is just the standard 1ghz so you need to download the UVOC of your choice.

I'm trying to find a fast stable ROM avoiding nightlies that has good battery. My go to ROM is usually AOKP but on the N7 I like the idea of PIE and Halo. Currently running PA 3.99 and it seem like a very solid ROM and I'm extremely happy with it, but I miss some of the AOKP features like battery bar, transparencies, lockscreen etc.
I'm not really into changing the DPI values, I want AOKP with PIE/Halo. I'm trying to decide between Carbon or PACMAN but they both have nightlies and don't really have stable/RC.
Any recommendations?
3 things...
1) Try not to ask for rom recommendations. It is only a little less better than asking for the "best" rom...and it also makes you seem a bit lazy. This tablet is a beast, and flashes roms in no time. I can flash and test briefly all of the flo roms listed on XDA in 2 days, tops. And usually, when I try new roms, I touch and go.
2) Just because roms have nightlies, it certainly does not mean that they are any less stable. It is nothing more than the devs pushing put their daily progress. In a nutshell, the devs release nightlies based from their most stable build. Tomorrow's nightly might have better RAM usage than today's nightly, and they allow you to flash instead of waiting days/weeks. It is up to the dev team to make that decision. Go ahead and try using any of the two roms for yourself, and you'll see what I mean. If you run into a problem, simply report it. Don't be afraid of bugs.
3) You really should look into learning more about DPIs. Using one general DPI for the entire system might not give you the best resolution for each app. I use Xposed Framework (along with most of the people here), and I change my DPIs on the fly by putting the App Settings into Sidebar (last app on left of screenshot).

The biggest point of this post is to try them both for yourself. Read the OP in the different threads to see if they have any bugs listed. Most don't.

What is my goal ? Beside learning things about root, custom kernel and ROM ? Pushing my Note in to the limits, of course.
Now, can I ask someone really really helpful to offer me a help or step-to-step guide for rooting, installing custom kernel and custom rom.
I know, that there can be some incompatibility between custom kernel and custom rom, so I will link here both of them and please, tell me, if they will cooperate or not.

I want GUI in the iOS7 style...means replace that ugly samsung black/blue/green colors with white, pink, blue
then control center in transparent style and switches will have black border and black text - just like:
for example I really like ios7 skin for poweramp and I would like to see it in the whole gui
then OC my gpu (to gain tiny performance boost in the 3D apps), make interface responssive with no lags at all and I will be really really satisfied
any ideas?
