In CM11 I have already re-mapped the menu button to the "Recent app switcher" using the CM11 settings. But i want to know how to switch Back and Menu around so it will be like more standard android.
I own other devices with this layout so i want to have consistent order of buttons. (Back, Home, Multi task)

What ROM are you using? If it's stock B&N software, is it rooted?
If you're using CyanogenMod, then you can turn on a set of buttons in the status bar that will replace the missing hardware buttons, much like on a Honeycomb device. It's in the Settings menu under Tablet Tweaks.
If you're using stock, you can install an app called SoftKeys or Button Savior and have it pop up a set of on-screen keys (menu, search, back, home, etc) whenever you press the "n" hardware button. You won't be able to install either unless you've rooted the device first, though.

I'm probably in the minority here, but I'm a big fan of zMooth.
You could also search for Nook Color keysmod and remap one of your volume buttons as Menu.
Keysmod is what works best. You'll have both menu and back buttons that's so convenient especially in landscape. Partner it with recent plus for adjusting volumes in-game and invisibright whenever you can pull up your notification bar.

I use "Virtual Button Bar" in MIUI. it can be set to extend the buttons from a trigger point, or to be permanently extended and float.
I was wondering if there is anything out there that can modify the recent apps button. I have noticed that I never use it and was thinking of changing it.
Paranoid Android ROM gives you the option of long-pressing the recents button to activate the menu in the apps that have a menu option. In those apps, the 3 dots of the menu button are inside the recents button. See the attached screenshot.

Brand new N10 and just unlocked and rooted running the stock ROM for now.

Well, ParanoidAndroid mapped a long press of the recents button to menu.
Run a custom ROM and configure the buttons however you want. You can set what they do for each button, add or remove buttons (up to 7 max), set what each button does when long-pressed, and even change the icon of any of the buttons. This is called the "AOKP style navbar" in most ROMs. Obviously that means you will get these features by running AOKP, but many other ROMs also use this same feature and way it is configured.
You should looking into Mr.Robinson's AOKP PUB ROM, it seems to be most people's favorite
I usually switch around my back and recents button, it just seems easier to work with how I hold my tablet and phone this way. I also like to make long pressing the back button automatically switch to the last used app I was on. Long pressing the recents button (for me) kills all open apps.

Coming from using Nexus devices for a long time, i got used to not always having the menu button on the nav bar (it shows on demand, and many apps like Chrome have a menu button in the ui), is it possible to get the same functionality on our G2s ?

I was hoping that with Android Lolipop that I installed two days ago on my S4, it would have the same behaviour as the S5 when you press the menu or home button. Since I use the taskmanager (application icons) very frequently, I was hoping that it would not require long-pressing the menu button anymore, but I was wrong.
I think this must be a Touchwiz-setting, so how can I alter the default behaviour to quickly access the taskmanager, for example like it is default on the Galaxy S4, as well as on the Google nexus devices (which use the square button for that on the homescreen).

You can do that with various custom roms.
Depends on how you want it. For instance, pretty much all CM12 based roms have the ability to set each key behavior. I have my menu key set to show recent apps when long-pressing it.
Most roms also have the ability to set on-screen buttons.
