Before I start, I use "nerds" in the lowest form of derogatory possible. I am a nerd myself, just not in touch with the Android life.
I've had an iPhone since iPhone 4S. I have a 5S. Getting a Galaxy S5 for the specs and size of the phone. However, I'm not a fan of TouchWiz + Bloatware. I know all Droid devices come with bloatware. What firmware, official or custom, would be the best. I'll say right now before I was leaning towards to the Nexus 5 due to its firmware is straight from Google and isn't necessarily filled with as much bloatware.
Any suggestions?

Read more? .. so that you'll have a better idea of what would be best for you. Touchwiz (S5) and Nexus are almost antithetical UI experiences. So it's an odd comparison. If you strongly favour either one, then you'd be unlikely to really like the other one.
It's easy to debloat the S5 though. A simple search will find many threads on debloating the S5. But arguably the best way to proceed is to root your phone then install a custom ROM. A custom ROM is a ROM that is already debloated and optimized to run on your phone. Custom ROMs vary from basically 99.9% stock (just debloated) e.g. XtreStoLite. To ROMs that add a lot more customizations e.g. Phoenix or Alliance.
As to rooting, Towel root is the method most people prefer and it's basically just a click or two. Look for the prominent Towel root thread or you'll find links to it on most custom ROM threads. Note that Towel root only works on pre June 6th firmware builds. So if you have a very recent firmware you'd need to first write an older build of 4.4.2 firmware to your phone. Then root with Towelroot and flash a custom ROM.

To be honest here as i had the Nexus 5, its fair to say that the Nexus 5 with for instance a custom kernel like Franco kernel is faster and smoother then the S5 will ever be. Yes the S5 can be debloated and is off course costumisable and is a good phone, the Nexus devices are the true tech/geek/nerd phones

I have been looking at the Phoenix ROM. It looks promising. I will agree with Gee though, Nexus being the "most" tech/geek/nerd around device. Hmm. Maybe I'll just go get a 32GB Nexus 5. Just really want to leave team iPhone.

Been reading these forums for the last few hours but still struggling to make my mind up...I would like to know your opinions on the best method of rooting my phone (SM-n9005 on lollipop 5.0) and what ROM and kernal you recommend please? The most important factor for me is stability/lack of bugs but without going back to an earlier version of android. Or would that mean that it would make more sense to keep the stock ROM/kernal?
I apologise in advance for any stupid questions as I am pretty new to this but very eager to tinker!

Well my choice for rooting is simple. Install a custom recovery (TWRP), then flash the SuperSU zip from there, done.
My preferred custom ROM (for you) would be Arya, cause it comes with lots of features, and it's based on stock Samsung TW ROM, so its stable as hell.
Kernel? Well I am sorry to say I can't say that, probably Audax? I am on Stock at this moment, and all I know if I move to a custom kernel it will be Audax at this moment, cause honestly I don't see any reason to use any other kernel other than that. I prefer a kernel for its additional features, and those aren't available then I don't see any point of using a custom kernel

Thanks a lot for the help! By the sounds of it then, i will definitely go with the Arya ROM...I'm assuming this and Aryamod are the same thing? Also, will this offer many more advantages as the stock ROM and will it be as stable? The main reason i have decided to root my phone is to get more out of apps requiring root and to get rid of bloatware.
With regards to the kernal, i guess being a novice, all i understand is that they can improve battery performance and phone performance so i would like to go for one fitting this. Unless i have missed the idea completely lol

Yes, the ROM is damn stable, as stable as stock ROM, I used the ROM for almost two months, and in fact I am downloading it now, getting bored of stock ROM.
Yes, kernel can improve battery life and performance, if you know what to tweak.

Thanks a lot! I'm just backing up my phone then I'm going to try to root it and install the ROM tonight! I think i'll leave the custom kernal for a while so I can see how i get on with the stock kernel. At least then i'll hopefully be able to compare once i do flash a new one.

Sure mate, we are here to help. Just do a wipe before doing all that, cause without wiping the ROM and all its features might not work and the ROM won't be stable anyway. Wipe everything from TWRP, under Advanced wipe section, except external SD card of course. Take a backup beforehand. Remember, if you do that advanced wipe thing, then you won't have anything on your phone, so better download Arya before doing all that.

I've managed to root it without any problems so I'm well chuffed
I decided to get the hang of titanium backup and TWRP backup before i start messing about too much with custom ROMS. Which for me, is a very sensible decision
I've been looking at the Arya rom which like you said, seems amazingly stable now, and the Darklord N5 or S6 port, which apparently is stable now too. Do you have any experience with the Darklord N5 or S6 ROMs? How do these compare to the Arya? Lastly, now that I've rooted it, is there much to gain from a custom ROM as it seems that you can get many different apps to customise different things whilst keeping the stability of the OEM ROM?

Unfortunately I don't posses any idea about those ROMs mate. As much as I would like to respect and admire those developers (you have no idea how hard it is to do even a simple mod, let alone a full ROM like that), at the same time I will have to say almost all the ported ROMs have some sort of issues, be it S6 or Note 5 or Note 4, yes, they might be negligible to some, but I want my phone to be performing as stable as possible. And as Arya is based on Stock Note 3 firmware there is no chance of any instability. But if you find Darklord Note 5 port stable and don't encounter any problem then use it, by all means. Heck if Samsung doesn't release 5.1.1 i next couple of months then I too obviously will that route, but for now 5.0 is okay enough for me.

Considering that there is much controversy and curiosity as to what so far seems to be the best update to have, 6.0 or 6.0.1, what were your experiences?
6.0.1 is not yet available for many devices as it seems, and the only way to get it is with custom ROMS. However, 6.0 is readily available, with just root needing to be installed.
With this said, is it worth updating to 6.0.1 through a custom ROM then, and can you possibly give some suggestions?
Well, I personally am kind of OCD about it and don't feel right if I don't have the latest version of android, so having 6.0.1 is sort of an imperative, especially after you experience things like the lack of a delay in the "paste" popup when copying & pasting text, the new emojis (considering 3/4 of what I do on my phone is texting honestly), stuff like that.
However I've had a hell of a time with finding functional AOSP ROMs. Out of the ones that aren't dead with their devs totally MIA (which is half of them), the ones that flash OK usually have some sort of radio problem which I've been struggling with on multiple ROMs even just today, and finally the ones that run mostly ok as a daily driver still have little quirks like random reboots. So try some out but if you end up pulling your hair out like me, might wanna just jump ship and stick to stock, that's what I'm seriously considering at this point.

I think I will just stick to stock. But most likely going to go with TruPure XMM 2.9. It seems to be stable, and the developer seems to be active! Props to him.

How is the battery life (SOT) doing for you, relative to your personal usage habits? The only reason why I'm staying on TruPureX 2.9 with 6.0 and Frankenkernel is because of the debloating the ROM contains while keeping the stock Moto features.

Stock 6.01 with the stock kernel working fine here. Don't see the point in installing a custom kernel when you need to downgrade the modem back to the one included in MM6.0, makes no sense.
You must not have a 1575. Franken is also much better then stock kernel.

No I'm running the one posted in general, currently Eu version but I started with Asia. I don't think there is any difference though.

You have a link? There are a few in General... Is it just a stock image or rooted/busybox etc.?

What ROM's are people running on their Verizon LG V20? Im getting ready to root mine and go through that process. Looking over the ROM's though and they seem to be lacking. Back in the day we had tons of options, now we have a handful on XDA. Are there ROM's people are running that arent listed?
Using the LineageOS weekly builds and they've been pretty good. Mostly just missing out on the second screen though.

Ive been trying to find screenshots as Im pretty particular on my OS. I used to love MIUI when it was around.

Did i pick the wrong phone i cant seem to find a whole lot of roms for the verizon variant I want a debloated stock or a twrp stock flashable that i can use magisk on it is inexcuseable how much verizon pushed onto this phone is it such a tall task do i really have to choose between having no root with a carrier bloated rom and a working 2nd screen to use a asop type rom?

The Verizon build of not so stock is probably what you're looking for. Stock based so everything works minus all the bloat. Has static at boot, search some of the other kernels, there is a few that fix static at boot.

Did you flash supersu or magisk? Not all roms come rooted...
None I had issues getting it to work had issues booting found weta it worked it has a janky root but it worked and Pokemon go worked and I don't even get the static lines on the screen...

I have gotten BrokenOs running quite well and smoothly. But lacking the second screen is what's holding me back.

Hello everyone,
I was a Samsung user for many years, until I changed my mind after looking at the OP specs and amazing features.
I bought it two days ago and it's really impressive, fast and smooth OS, clean and fluid, it also has a great battery life.
But I was wondering, if I should root it to get the maximum of the performance and battery improvements, I saw a couple of kernels and some of the users' comments on how they improved the experience.
So all I'm asking, is it worth rooting the device only to flash ROMs and kernels for better experience?

I think it is worth for custom kernels at least for me. I personally use a lot of Magisk modules for charging, ad blocking and so on and I'd never want an unrooted device
This is the first phone ive ever had which I've not rooted or even unlocked the bootloader. It's on my to-do list, was waiting for a fully functional TWRP. But I think that times soon.
The benefits to rooting and installing a custom ROM are huge, it's a great phone for development so yes I would recommend it..
Personally I don't usually go with custom kernels as I tend to find stock kernels more stable, but that also depends.

Yeah same, but I'm not planning to flash any custom ROMs, I'll use only custom kernels because some of them are promising and tend to improve the overall experience.
