the android one would have a format like this:

the chrome one:

Been searching around and have seen the tutorials telling you how to change the user agent settings in Opera through the 'opera:config' menu but no matter what setting I choose I get the same report when I go to http://www.whatsmyuseragent.com

Hey maybe this is too late but look for User Pref in about:config, there is a Custom User Agent setting where you can enter your favorite one. Rember to scroll all the way to the bottom after entering the UA and press SAVE, then restart Opera.
Iphone UserAgent:
Mozilla/5.0 (iPhone; U; CPU iPhone OS 2_2_1 like Mac OS X; en-us) AppleWebKit/525.18.1 (KHTML, like Gecko) Version/3.1.1 Mobile/5H11 Safari/525.20

The question is: is there any way to trick Opera in thinking it's Safari so that the IPhone optimized sites display the content as seen from Safari?

Look up the user agent for the Safari browser and put that in the advanced options part of Opera.
You make it sound easy, I'm not saying it's not, I found Safari IPhone user agent : Mobile Safari 1.1.3 – iPhone but in opera:config under User agent I can only find Spoof User ID with a numeric option. What am I missing ?

this is a bad idea, iphone versions of webpages often take advantages of features only found on safari fro iphone. since oepra wont support those features you will just see badly format pages with links that your phone wont understand to video content and similar.
but if you really want to do it use opera 10 instead of opera as installed on the hd2 as it supports user agent changing.
Put this under custom user agent:

If you want a better one,use this one; safarri sucks.

I have only just come across useragents so I have looked at mine on two sites, whatsmyuseragent.com and useragentstring.com. Both sites have identified my unrooted, sim free, stock browser on Note 3 as:
Mozilla/5.0 (X11; Linux x86_64) AppleWebkit/537.36 (KHTML, like Gecko) Chrome/28.0.1500.94 Safari/537.36
According to this my Note 3 is not identifying itself as a Linux device and not a Android device. On checking http://www.webapps-online.com/online-tools/user-agent-strings/dv/brand125499/samsung-galaxy-note-iii, all of their examples are showing the Note 3 identifying itself properly such as:

Hi,
Just been googling and found the answer in a nexus thread.
Your'e not getting android in the UA because you're using Desktop View. There's seemingly no way to identify that this is a mobile device in that mode. Once you'll switch to normal view you'll see the right UA.
I just switched back to mobile view and my Note 3 identified itselft as a Note 3.
This leads to another question. Up until now I have had unlimited tethering on the One Plan. Now that Three are capping us, if I use desktop view on my phone so identifying my Note 3 as a linux machine will this data come out of my Tethered allowance rather than the inclusive unlimited phone data?

It shows Linux, Android is based on Linux.
