What is your favorite rom (including plain ol' stock), why, and kernel?
can I use the Gapps I am got for the S3?
also, what other apps / tweaks do you guys recommend?
I never used an Android as a tablet so it's some what of an uncharted waters for me.

My best tip is to do some reading. These same questions are always going to get the same answers ...it's all up to the user and their needs.

This. I planned on getting the Nexus 7, so I decided to keep checking in at this forum to see recent developments and stuff. By the time I got the device, I was already aware of what defects to look for, what ROM's and kernels I would try first, etc...

Seriously, Custom roms are not worth of it.. or well not yet. I've tried over 6 differents rom and came back to Stock. Stock 4.1.1 has really great performance. The only useful thing I can think of is to flash a different kernel over the stock rom to overclock.

I disagree. Paranoid Android gives you control over your layout unlike stock.

I can read, but at the same time, I created this thread to get other peoples opinion in one place rather than going all over the place. and as for above, I was looking at PA too.
Can I use Gapps (7.27 i think) I am using for the S3 or does the Nexus 7 have it's own different Gapps?

guys which do you think is better stock rom or custom rom? I think custom roms like cyanogenmod performs better than stock and have much more features!
Stock=4.1 very good.4.2=Networks error,random reboots.

Frankly, its totally subjective. Some swear by stock, and some by custom roms. Then, others by only specific custom roms. The only real right answer is the one you decide for yourself after experimentation. So, start the journey, and enjoy. Youll know what you prefer in no time! Have fun!

I totally agree with this.
Personally I'm a fan of Cyanogenmod. Just straight Cyanogenmod for me but others swear by CM derivatives like Parandoid Android.
I say try some different roms out and see how they work for you. I did this and found myself going back to Cyanogenmod. Now I actually purchase android devices based on whether or not they can run it.
I like CM10.1 so much that I've learned to build it myself and make my own nightlies

I'm rooted but otherwise run stock. I like it. The vanilla Android is why I flashed custom Roms on my old Droid Inc 2 (because I HATED the Sense UI). And I get that vanilla style with stock.

So i've hesitated on rooting for a while now, but i finally did today. Now i'm looking for some good roms to flash, and i notice that a lot of N7 owners use PA. I want to know why? I tried CM10 and its pretty cool
Eh. I didn't like it. I had to RMA my tablet because the touchscreen was bein' cray.
But the interface of the rom? 10 points. Amazing. So fluent... it is a hybrid ROM that let's you use the tablet in tablet ui. And switch between stock, tablet, and phablet. I loved it.
Tldr;I hated it. I loved it.

The best thing to do is read the op for the pa rom and note the features it lists. All roms have their features listed to help you decide. Also, read other users comments within the thread to see what they are saying. It is all there waiting for you to read.
And for future reference, questions belong in the Q&A sub forum, not general.

Did you do a factory, cache, and dalvik wipe prior to installation?
I agree. PA has never felt as stable for me as CM. And I find that I prefer my tablet in portrait mode now, so I don't care about hybrid apps (plus the mail ones like email work proudly now)

I just tried it out and it was really unstable for something I would use everyday. I use SmoothROM and it is really stable. I put tablet UI and its perfect for my preference. It's all up on what people really want from their Nexus I guess.

Gotta disagree, as mods have gone on record stating that something such a that is outside of the scope of the Dev forum and against the rules. Replies in those threads are supposed to be limited to those relevant to development of the rom, such as bug reports. Asking a question of this nature in a Dev thread is only going to make it harder for folks to find relevant info in the thread.

I've been running PA on my N7 for a while now. Had 2.54 (the last 'stable' release) on my old 16GB and it was great. When I broke that one I got the 32GB and the first thing I flashed was PA 2.99 beta. Now running the 14-01-2013 beta build and for me its flawless. I love tablet UI and the ability to change the layout of individual apps and to set DPI to 160. PA Colours let's you choose custom colours for Nav bar, buttons etc. Its smooth and stable. Its like another device entirely. I even bought their Preferences Pro app to support the project and I'm eagerly awaiting P.A. 3
Combined with M-Kernel a30 and Trickster Mod I'm running at 1.9Ghz Max CPU and 600mhz GPU.
Its beastly. NFS:MW flies! Lol

This is a known fault. Its easily sorted by installing a 3rd party launcher although I believe it is fixed in the new build (which I'm just about to flash)

a lot of n7 owners use rasbean jelly too
The launcher bug is just with the last beta release. I use Apex anyway. The new PIE navigation is pretty slick.

Honestly i think i'd love to flash a PACman rom. Then i wouldn't have to go back and forth flashing PA, and CM10.1
I'm looking for a ROM that is mostly stock + optimizations. I'm not interested in the other apps and tools that other ROM's install. Can anyone recommend one for me?

I can't speak for or against Rasbeanjelly but what I can say is that it's not definitely the best ROM since that's a completely subjective question (which is why the quoted post is worded as saying it fits criteria, not that it's the best).
@op Threads like this are pointless because you can receive multiple different replies and the only way to decide for yourself would be to try them all out anyway so the entire thread would be redundant. Not only this, but it's offensive to devs to say that someone else's ROM is better than theirs.
EDIT: Well it seems my point about different replies has been proven by the two above posts.
Rasbean both variations vanilla or normal, or SaberMod currently one of the fastest if not fastest roms around.
But just try them out and see what works best for you plenty of good roms about.

There is no best ROM. Each ROM tends to offer something different and what you may see as useful or cool may not be anything special to somebody else. With that said, I am on the newest version of the PACman ROM and I think its the best rom available bar none. There are so many options such as PIE controls (which allows you to hide the NAV buttons allowing for more screen space) and not to mention the options of Paranoid Android, AOKP and Cynagenmod. Throw in the rock solid stability, (no force closes, battery drain or lag) and you have a real winner.
Anyway, like I said, that is my opinion but having used many ROMs I can tell you that most of them are amazing in there own right. There is no "best".

theres no best rom, theres only the rom thats best for you. spend some time trying out a few different roms, then pick one that suits your needs the best. after that, spend some time trying different kernels, then pick the one that you like. anyways, heres a great place to start, especially for a thread like this one http://goo.gl/YG5Gl
Well, this thread managed to become hostile and off-topic in a matter of minutes. Can't say that I'm not impressed though. Anyway, while you've probably figured out as much there is no best ROM because it's completely subjective and in addition being a Nexus the ROMs all seem fairly similar to me (it's odd to have come from an HD2). It's also not fair to devs to judge their work when they do it completely for free and opinions can easily differ. What I can say is that you'll struggle to find any ROM that's bad.
OP as stated, there is no best, it is what is best for the individual User, with so many variables involved...apps/usage and so on, the best thing to do is test and run the great ROMs out here.

There is no custom rom that is the best. You have to look around and see review and comment on the Rom and bugs that it might have.
I personally use xylon.
Also miui is still a port, not officially ready for a daily driver

Best bit of advice anyone here can give you is too read my friend. Even the question you asked if you think about why would there be a difference in simply storage size that would effect the phone. There is a lot of useful information and tweaking that can be done. Do yourself a favor and explore but be safe and smart before doing anything....
Personally I think the 8GB is fine, I have the 16GB myself but I regret it as I keep most of my stuff (music/pictures/videos) on the cloud...
In terms of ROM support either will be plenty, if you see a ROM that uses 8GB of internal memory you should avoid it like the plague anyway.
Just look at what you use on your sdcard on your current device and take it from there, IMO.
My favourite ROM is Root box, it has most of the desirable features from all the other main ROM distributions (CyanogenMod, AOKP, Paranoid Android).
If you like simplicity, stick with stock or MIUI.
