samsung never provides changelog, all those are nothing but different roms for different regions.
increment in the last 3 letters generally denote newer roms

There is no best ROM anymore than there is any one best car or vacation. It depends on what you are looking for and you gave no hint of what your priorities are.
Moreover you have a niche model. There are a lot of custom ROMs to choose amongst for Qualcomm S5's. However you have an Exynos based handset which comparatively few people use and which is incompatible with the Qualcomm models. This means that few custom ROMs are available for the 900H simply because few developers own the model that you have. Have a look in the android development subforum to see what is available. The last time I looked it was ony stock or debloated stock ROMs for your variant.

One is odexed and one isn't. Simple huh?
As a simple search would have shown you, stock firmware apps are odexed, while few custom ROMS are. Odexing is where an app is split into two parts ostensibly to make them load faster upon boot. Odex is a pain in the neck if you want to modify a system. It's sole advantage is that it may reduce your boot time.

In terms of changing ROMs here on XDA, I was wondering if the Chinese version is the same as the US one and I can flash all roms from here.

You can quite easily.
Here's a link to HydrogenOS
Both devices are the same, the differences (I believe the ONLY difference) is frequency bands support between the 3 different models. Europe has different to China has different to USA. You can just install whichever ROM you want to, personally I've used OxygenOS, HydrogenOS, Exodus, stock (unofficial) CM and other iterations of CM.

As you you all know, when Samsung first released kitKat for our beloved G7102 it had many problems, specially the very bad gaming performance.
The stock ROM I tried back then was G7102XXUBNH5, during this time they have released different ROMs for KitKat, like G7102XXUBNK2 and G7102XXUBOC1 and G7102XXUBOF1.
So my question is, Do all of these stock ROMs have the same problem?, or did Samsung fix it in on of the other versions I mentioned?

No Samsung based rom available till now. A indonesian dev tried to port a samsung rom but there were a lot of bugs. I dont know he is fixing bugs or not.

It's just regional stuff, there aren't feature differences to consider, you should install your original device ROM or Global ROM to avoid issues.

-You can go back using Fastboot method in miui rom official site, or you can flash a MIUI Recovery ROM for your device.
-You have to remember which version you have if you are going back tou your stock rom due there's some picky problem when mixing ROM in some devices most of them the CN ones.
-More than regional things, difference between EEA, GLOBAL, CN, INDIAN, ETC is about developvemnt status and OTA updates, as for now there's not Global dev ROM, just China, so Xiaomi.eu does the job to bring it the weeklys update in their ROMS.

.eu version doesn't have bloatware as far a I understand, you might want to check that out
