Depends on how you want go about doing it, you can get an official ROM and flash it with Odin, or you can root it and flash with one of 2.3.6 zip with CWM.
Doing it via Odin will be easier, going the root method is longer but will give you better ROM options in the future and, probably somewhat easier to flash ROMs once you done it.
So which is it to be?

on using ODIN:
* dont need ROOT to update to official 2.3.6?
* have a polish GalNote. if i update to Samsung official HK ver of 2.3.6, will i have problems updating to official ICS once it gets released?
* with the official HK ROM installed, will i have problems with google apps not working (for those not in the US. am in US btw)?
on using CWM:
* can you use CWM to update to official ROMS?
* update to official ICS if you have unofficial ROM installed?

I'm running the P1000JXJJ1, FroYo JPJJ2 firmware on my Tab, and samfirmware states P1000JVJL1 is the latest one !
so I was advised NOT to use KIES, and ODIN was better !!
My tab is rooted with OCLF set, Just a quick question, Odin will delete all my data and also I believe that I'd have to re-ROOT the device right?
another question is since I didn't have market out of the box, the product sales code has been changed to XSG.

if u use oclf, undo oclf b4 update firmware, kies or odin works fine for me, i'll only use odin when i screw up with my tab

searching for something else I accidentily found this thread.
Maybe my experince might be of any interest: got the galaxy tab 3 days ago, installed KIES and instantly got a message to update the firmware to Froyo JK5. I followed the suggestion to save my data which I regret later, because it took very long (had already copied a lot of videos to the internal sd) and couldn´t stop it. To cut it short:
the update was successful and nothing deleted, just everything in place. Also synchronized Outlook contacts, though at 96% it got stuck - waited a few minutes, then broke up and all contacts had been transferred fine.
(don´t know, if firmware is different for other countries...)
Odin will not delete your data if you did not choose to repartition, no need to use pit file to repartition if you are just upgrading fw from the same region..safest is still via KIES
To correct some mis-information from above. Flashing with Odin can delete your data, it depends on what components are included in the image you flash. If you flash an official ROM with Kies you should not loose your data but there is always a risk of an issue occurring during any flash that could lead to data loss. Unless you flash a pre-rooted custom ROM you will loose root and SU during a flash. These can be re-applied easily to the SGT using the Super One-Click method.
Redardless of what flashing method you use, if you use RyanZA's OCLF you must undo the lag fix before you flash, otherwise you will certainly loose data and possibly end up with a corrupt system that won't boot (I had first hand experience of this early on in my flashing days with my SGS!). You shouldn't really need to apply a lagfix to the SGT as it doesn't seem to suffer from the same lag as the SGS.
Finally, flashing with Odin can lead to product code being changed, especially if the ROM you flash isn't intended for the normal product code of your device. There are various ways to restore your poduct code, look in the Samsung Galaxy S forums for suggestions on how to do this as the basic construction of the ROMs is very similar between the two devices from that point of view. Also, be aware that people with SGS devices have reported loosing their IMEI while flashing with Odin. If this happens you will end up with a WiFi only device unless you backed up your /efs folder before you flashed. There's lots of info in the SGS forums about this and it's worth a read if you are new to flashing. I haven't heard of anyone with a SGT loosing their IMEI yet but it's worth taking precautions.

im from malaysia and currently using galaxy S and galaxy sl for my wife (not tabs) but i've been request by my brother who owned the galaxy tabs to upgrade it since i had some knowledge..
currently his tabs running on 2.2 stock asia version.and i wanted to flash the latest version 2.3.3 europe edition since i saw many custom rom on it..i've download the latest firmware that is P1000DXJPE ## via samfirmware.com and could not find any pit,csc and modem file..
my question,
1. am i missing something here?
2. is it possible to flash without pit,csc and modem?
3. i know how to flash the file using pda since i've done it with my SGSL but before that i need to flash another old version firmware to used it.is it the same with galaxy tabs?

Go to the Android Development section.
Look up Overcome and BOCA for the Galaxy Tab. Both a great however I prefer BOCA. The current release is 2.3.4 but 2.3.7 is in the works.
If you follow the instructions for BOCA you will have a GTab that feels like it was newly born again.

Yes. Follow the instructions on the magrathea site or overcome
Use overcome instructions to instal stock GB 5. It tells you the pit and modem to use for your tab.
Then install the overcome kernel and reboot. It will root the tab and format the storage.
Then you install the Boca zip over the overcome kernel.
If you just want overcomes Rom follow their instructions. They make it simple

What I wanted to ask is that do I need to flash a region specific BASE ROM for each & every Official Froyo release?
E.g. do I have to be on DDJG6 to flash DDJP2? (Although the former isnt exactly a base ROM for the latter -more a precursor, but I hope you get the point)
No it is not the same for every rom
Jpm can be flashed directly but jp2 requires to flash jg6 first!

Choose the best rom for your region or other region that worked on SG3
For example : i used JPM from EUROPE region

Yup if u want to flash using Kies then DDJG6 is required as it was the official firmware for Galaxy 3 GT-I5801

if u want to flash DDJP2 via kies or odin u need to flash DDJG6 or u will get into a boot loop based on my experience flash DDJP2 via odin & kies
and if u want to root it latter on use superoneclick 1.7.0 it worked for me
Thank you for your responses. Based on my experience, i shall narrate below the sequence of flashing my Galaxy 3 through various ROMs (Please note that i used Odin)
1) Bought my Galaxy 3 with stock DDJG6 (Eclair) pre-installed.
2) Tried updating via Kies to DDJP2 but failed due to poor connectivity (timed out). Flashed through Odin successfully. Rooted with SuperoneClick (Rage against the cage). Deleted stock Swype apk & other relevant files with Super Manager and installed Swype beta.
3) Flashed XWJPF directly over it.
4) Flashed Indroid V3 custom no lagfix directly.
My phone is currently on Indroid and running OK(touchwood !). Some of the precautions that i took before flashing was - backed up data, backed up efs folder, deleted bootloader & sbl.bin files from every firmware with IZArc. Also i hard reset the phone before & after flashing. Phone must have ample battery charge. In case of a bootloop (which happened a day after a flashing DDJP2 i flashed again)
The only problem which i have faced since my first flash to DDJP2 & which persists till now even after flashing of multiple ROMs is that some of music files are not played on any music player (stock, custom or downloaded from market). Notably all of those files are .m4a format although some of the other .m4a files do play. A case of missing codecs which doesnt allow playing of files with certain bitrates? I suspect it has got something to do with the sbl.bin file although that's pure guesswork

Yes. All custom ROMs, that works with GB - tezet's CM9, Endless7's CM7, Argen2Stone, MS2Ginger... in fact all roms, except MIUI and stock froyo (but you can downgrade now and use these too)
Actually, it's not possible yet, the Vivo ROM (I'm guessing Vito was a typo) can't be rooted and, right now, it's not possible to install any custom ROMs or downgrade.
Can't he just flash SBF of another GB ROM, which is rootable? (UK/Brazilian/China etc.)

No, the Vivo ROM has v4 BL, and the other GB official ROMs have v3 BL. I'm not sure why it doesn't work, but nobody in the forum reported success in rooting / downgrading (or even changing to another official GB) from Vivo and Personal ROMs.

So the ratail 2.3.6 has no v4bl, too so i cant flash the sbf, too?
So its normal, that i cant flash any other sbf? Or are their other roms with v4bl?
And do you think there will be found a way to root/downgrade this version, or is it impossible?

Yes, the 2.3.6 has v3 BL, unfortunately you're stuck in the Vivo rom for now. If you try to apply a different SBF, your phone won't boot, and you'll have to reaply Vivo rom to use the phone. For now, you can't change ROMs either.
All we have now is hope that it'll be possible to root and downgrade this version, I'm sure a solution will appear sometime, we just have to wait.

But.. doing that I now cant install firmware upgrades...
Is it possible to remove root so that ota firmware upgrades work? Have no idea as in the past I've just had custom roms..

One of the mods will probably move this to Q&A as its where you should be asking this question.
Anyways if your sticking with stock and rooted but want to update the firmware as they come out you simply get it via a full firmware flash from Samsung's own Kies 3 software.
Doing this however breaks your root and any apps/mods that you've installed to the system partition however you can simply just re-root and reinstall any system apps/mods you happened to have installed there.
This is not a big deal and is generally quick and painless.
Also remember that if you use a custom recovery TWRP or CWM doing a full firmware flash will restore the stock recovery and you will half to re-flash that back as well.
You wont get notifications about updates however since your rooted and OTA gone. Just keep an eye on things for your specific device and region for updates. People generally post here on XDA about the new updates when their available as well as firmware update news from Sammobile.com
You can also plug your phone into your computer with Kies3 running and it will check to see if your on the latest firmware available as a way of manually checking.

I know for a certainty Samsung stopped pushing updates long ago for the S3. Please help I'm very confused by this! Updating the firmware is necessary because the firmware brings a newer version of bootloader and for it to be compatible you need the latest version of bootloader (B1.03 right now)
Other phones need firmware or driver updates too. Sometimes they can be baked into the rom or an additional zip. It's up to the manufacturer how they deploy drivers.
Also the well known sim on/off switch is a driver inside the modem. And if the manufacturer don't release the source you cannot see the changes and need the stock rom/files to flash them prior the custom rom to get newer drivers.

Hey guys , my wifi isn't working and i cant upgrade to nougat ,while upgrading the file starts to install and then the phone reboots into recovery and stops there plz help ! Is this because of root ? But i have removed my root and twrp recovery ...... and after that i tried ota nougat zip file but it didnt flash

Don't discuss here, ask your question in the thread you're following the instructions to upgrade to nougat please. BTW Your given information is not specified enough to help you out.
