You could download folder organized lite
Change the app label/name of PowerAmp to music and the icon to the stock music icon within the app and then add the newly created shortcut to your homescreen via WIDGET, folder organizer item, and then select it.

That seems like an awfully complicated way to just "add to favorites" and have it show on my carousel screen...
I don't mind the way it looks or anything, I just want to click on "Music" and have it open PowerAMP, instead of me going to App -> PowerAMP, or Home -> PowerAMP.
Another reason why I'm not going with Dolphin Browser, as I just want everything to work as is (e.g. press "web", and it loads the browser; if I can have it load Dolphin Browser, I'd switch).

You get them the same way you get other stuff you don't have. You get them off the Internet/Android Market.
I use MusicMod for my music widget. I don't use calendars so perhaps someone else can help you there.
I don't use a music one because it's built in to the lockscreen if I'm listening to something. For calendar I use android agenda widget

Here is the stock 2.1 music player with widget. Just transfer the apk to your sd and install.
I use the widget on the lock screen. Why clutter up your home screen + waste resources when there's one already built in to the lock screen?
Another great option is "cubed" in the market. Best player IMO, but there's nothing wrong with the stock one.
Calendar widget, I don't know. Never really thought about it! I agree, it should have one built in.
For a good calender widget find "jorte" has tons of options.

How do you get the music widget on the lock screen?
Pure Music Widget and Pure Grid Calendar are both great! Pure Grid is like the HTC Sense calendar.

It should come stock on the vibrant open your music player and start playing a song then when you lock the screen it will be on the lock screen when you go to unlock it.
I also use the controller in the lock screen. Instead of a widget they put the quick controls in the notification put-down. You just have to open the music player initially.
I use the Calendar Clock widget. It's ok.
doubleTwist is a good player and has a widget.
when my phone is unlocked i drag down the notifications panel when music is playing and there are music controls. also in lock screen mode you can drag down a little window pane while locked with music controls (phone remains locked).
The player in the notification menu while the phone is locked is no good for people who like to lock their phone with a pattern. doubleTwist has a good widget, but only pause and skip forwards buttons, no skip back. And I have as yet been unable to make the widget background transparent...
Try the app called 3, search Filipe Abrantes in the market.... It has a pretty sweet widget and its a bad asz music app...
Ok so I know theres ADW Home which is my favorite.. But I hate how I cant have friend stream nor the mail and calendar widgets from HTC. Is there anyway I can change the icons without having to change everything else? and/or the dock.
Yeah. I made a folder on the sd card root and loaded it with my own custom icons. Then in ADW, long press any app and select edit. Then click on the icon and choose select image. Browse to your icon folder and select.

I use the folder organiser app to create folder like the one you mentioned
You can't create folders in with the standard honeycomb launcher, try ADW EX
ES File Manager will do the trick, and a lot more

let me help a bit more here.
For some strange reason, google took out the default folders in honeycomb. So now you have to use a third party application, but don't worry because many of them are actually better, and you can also add a custom icon to your folder.
The three big ones are:
Folder Organizer (paid), allows you to make folders and give custom icons to any app you have installed. Lots of customization but the icons get a little smaller than the phone versions. You can also choose the order of the icons in your folder.
Apps Organizer (free). basically nothing more than putting your apps into folders. Also allows you to customize the icon of the folder. icons are phone size.
Smart Shortcuts (free). allows for apps, contacts, and bookmark folders with customiseable icons. no sorting. icons are phone size. Though the dev has told me personally that he's working on enabling the larger honeycomb icons.
there are others such as ES file manager but these are the 3 big ones. personally i use smart shortcuts on my transformer as well as folder organizer for custom icons (desktop visualizer doesn't work on honeycomb yet.

Well, if you use a a different launcher, like launcherpro or adw, you can use custom icon packs(Suave etc).
Good app,desktop visualization shame it cant replace apps stock icon

Yup, using an alternate launcher in my opinion is the easiest way. There are plenty of themes available, and you can also change individual app icons very easily. I use Go Launcher Ex. It has some really cool transition animations.

I totally agree, HTC, must realise that ALOT of their customers want to tweek Sense more than they currently allow, so they eventually turn to other launchers.
Causing negative feelings towards Sense... as stable as it is!
I also prefer Go Launcher Ex for this, because not only does it allow Icons to be easily changed, but also renaming of apps.
I hate to see names cut off on the homescreen so I change them - for example
Tune In Radio is cut to Tune In... - so I change it to 'Radio'
One solution could be with Folder Organizer App. In Folder Organizer create a shortcut of app you want and simply change the icon. Afther that go to home, add, shortcut, Folder Organizer Item, shortcuts and select the one you created.
I have not found any launcher or appdrawer that simly uses folder icons that is suitable (could choose custom) to the group. All/most launchers uses the iPhone app-miniatures-impossible to easily see-folderstyle. Also icons and foldericons are too small. So here is a suggestion.
3*4 big foldericons, e.x. social (phone, messaging, facebook), office (word, excel, etc), media (camera, pictures, musicplayers), tools, games, settings (settings apps, widgetsettings)
When a new app is installed, it is automatically asked in what folder to put it, or if create a new folder for it.
(I only found 3 icons in my example, and not very intuitive suitable icons, soo you have to imagine 3 more rows)
a extra feature: it could open up a cloud of widgets when sliding a foldericon. Example sliding the social icon pops up a circling cloud of facebook stats, tweets, messages, last phonecalls, and contacts. Or it pops up when simply clicking a icon, and further clicking on the widget opens the app.

With some work it could be done kind of, using SSLauncher: Only 2 pages. One page with informative widgets and hidden buttons to start shortcuts. One page with big folders 2*3 grid, when clicked they open folder showing app icons at normal size.
Minimal, non-distracting, fast. Screenshots below.
Sound almost exactly like folder organizer. You can have a scrollable folder on your home page(like the tools one in screen) or have icons like the those in the screen( tools games) when you click on the icon, you get an app drawer with only the apps you specified as that category. It also asks what you want to categorize an app as when you in install it, on a per app basis,
