I'm currently using the stock DDJP2 rom in my SG3 (I5801) which sucks a lot (specially freezes a lot & poor battery life) . I've heard that there some stock ROMs which are very good in term of stability & battery performance. Now I want to use those ROMs and shortlisted three ROMS - XXJPM / XXJPN / XWJPF (which are for I5800). My main targets are:
1. Better stability & performance
2. Better battery performance
3. More customization option
4. Dont want to use any custom ROM
Can anyone suggest me a suitable ROM for me out these three mentioned above. Also please let me the know if there is any possibility of loosing my IMEI no after flashing with these roms (have seen that some people complained about problem who uses I5800 ROMs in I5801). If there is any possibility, can you let me know the precautions I should consider. I'm some confusion after going through the various posts and wanted to clear all of these before flashing.

This was my goal too, I flashed Lestatious ROM and I must say it's the most stable and fast ROM. Even without OC it's extremely fast!

I'd like to recommend you JPM. And this will be end if we talk about roms from your list.
But I hope you will consider one from Dharama's roms. I'm sure you will find a rom (from Dharama's roms of course) that fits expectations for a perfect rom. Personally I use Dharama's Clean Performance Rom - fast, light, stable, with easy installation, without useless stock applications.
I've also heard only good things about Dharam's Clean Rom.
I was on DDJP2 and had many probs so switched to XXJPM and I must say I am very satisfied with it. It too has some minor probs and the occassional freezing but it is one of the best among the stock ROMs.
As for losing your IMEI, yes there is a chance so backup your /efs folder and also create a efs.rfs file so that even if you lose your IMEI, you can get it back. You can find the tutorial in the roll up thread.
Another thing when flashing a ROM is remove the boot.bin, sbl.bin and logo.png files and your chances of a hard brick is virtually 0%. You can also download the ROMs without boot loaders from Kyrillos thread.

As mentioned earlier, I would prefer a stock rom rather than a custom rom and hence decided to go for XXJPM. I've downloaded the stock XXJPM rom from the samfirmware site but I cant see any boot.bin and sbl.bin file though I'm able to see the logo.png file (which I guess the first pic after the phone startup). I can only see the folling files - cache.rfs, datafs.rfs, factoryfs.rfs, logo.png, modem.bin & zImage file.
Can anyone tell me which file should I remove before flashing this I5800 rom in my I5801. I've already copied the /efs folder to my sdcard so I can restore my IMEI no & MAC address if anything goes wrong. Is this enogh before flashing the XXJPM Rom. I dont have extensive knowledge in flashing. Please help.

Jpm does not have the bootloader files so you need not remove any files

Hello Mate,
For improved battery life, fast and stable ROM, I recommend you use Doc's Rom, you will get all of this, and no messing with your phone.

Note that you will find a Slim version and "normal" version, slim has been trimmed every app that is not absolutely indispensable, since you are new to custom ROMs, it is best to get the normal version.
And here you can find a nice tutorial on how to make a clean installation, I suggest you follow this guide when flashing any custom ROM:

This guide shows you how to instal Doc's Rom v4 based on JPU, the most recent version so far is v6.2 based on JPY, the installation process for both is the same anyways, you only need to follow the complete guide the first time you get a custom ROM, after this it is much easier to change ROMS

There is no best ROM, it is up to you to find the ROM that you want.
You can use the latest stock ROMs or Custom Roms which are really just repackaged/optimized/improved/faster stock ROMs (Doc is most popular for these reasons).
These discussions are not beneficial to anyone at XDA. If you are too lazy to flash and find what you like, then you don't belong at XDA.
I'm afraid that "which ROM is best?" threads always end in disaster here at XDA, and there's no answers to be found here that can't be had by taking some time and doing some personal research on all the options that exist...the benefits and faults of each are already well-documented.

first of all i think your both in the wrong thread lol, wont get noticed much in this section.......... but anyway
Are you using 2.2 or 2.2.1 ?? there are alot of fixes in the 2.2.1 and is a lot quicker for a stock ROM.
if you wanted even more speed you could go for a custom ROM there is loads to chose from.... but it can get a bit technical so if your unsure DONT DO IT !!!
There are a few things to consider:
- as stated above, you should make sure you get the latest, because 2.2.1 should be available (even officially) pretty much everywhere
- after flashing a factory reset is recommended to get the best performance (do a backup before so you can restore anything)
- there are better kernels out there that can speed up things and make your experience smoother (speedmod, voodoo, tegrak, etc)
- there are custom roms out there that are junk free and should provide a richer better experience.

Kernels and ROMs go hand it hand, it pointless getting a custom ROM and keeping stock Kernel. or vice versa
if you look it the development section and look for kernels (speedmod, Voodoo ect) there is a detailed step by step guide to installing them, and what benefits they have... it will make more sense for you to read through it all, than it would for us to try break it down into simple terms

well if u're on 2.1...i recommend to first go to 2.2 with odin(stock)...and then look at dev section and select a rom which suits you best...
i use three rom's...two are froyo&cm7(2.3.5)...and with froyo ones i have zero problems...i think if you choose betwen these two and follow all the instructions tight....then you should be fine

But if you want to upgrade your phone, do it with some custom rom from this forum. I believe the Kyrillos rom is the most popular (hence, 'the best'). I upgraded my phone being a total noob to the kyrillos rom and I'm very happy with my galaxy 3. It's much faster (without overclock) and my battery lasts much longer. I can do things my phone never could before (with stock 2.2).
Regarding your points of concern:
- Messing things up: it's really difficult to really really **** up the phone. Follow the instructions and if you have a question, search on the forum or ask it. Once you've done the rooting, you realise it's a very simple proces.
- The possible bugs: sometimes you encounter a bug, but in most cases it's no big deal ( some visual letter or icon thing) and chances are high it's repaired in the next version.
If I was you, I'd consider a custom rom (like Kyrillos 9).

Im indeed on 2.1 bought my phone one year ago. But i have linux so need to use my brothers pc and i dont wanna bother him every week to upgrade my rom to solve anoying bugs
I just bought a new i9000 and I want to upgrade it to the latest OS possible (hope ICS 4.0 is available)..

Well, first of all, the latest roms are not always the best ones. Since gingerbread 2.3.4, we've had in sequence: JVQ, JVR, JVS, JVT and now JVX, JVW and JVZ.
However, many still consider JVR to be smoother and more stable than the newer ones. Then, there is also the wifi problem on JVS and above.
Similarly, there is the infamous phone.apk force close problem on all these roms, which was not present on gingerbread 2.3.3.
But gingerbread 2.3.3 had serious battery drain issues, which weren't present on Froyo roms.
So, here's what you need to know as a beginner:
-The latest roms and custom roms give you the advantage of theming, modding and tweaking, all of which are very fun and exciting. Seriously. I used to flash my galaxy s multiple times a day.
-But the smoothest, lag free roms are the Froyo 2.2.1 roms. Stick with those if you want stability and speed. After all, gingerbread doesn't have any important extra functionalities. But, froyo roms lack support for latest tweaks and themes.
So, if you're happy with your current rom, there is no actual need to change it.
But, if you are really keen on trying other roms before settling down, you need to be able to flash roms. To do that, you'll need to:
1) Install Samsung Kies to get the samsung usb drivers
2) Download odin 1.3 or above
3) Download the rom of your choice and follow their flashing instructions
4) To be safe, download a froyo stock rom and a gingerbread stock rom with bootloaders just in case you need to revert to stock
5) To be even safer, perform the unbrickable mod on your phone first, though the SGS is pretty hard to hard brick anyway.

Hi Everyone first post since owning my i9000 since it came out and have followed xda since then. I would like to thank all the devs for everything they have done for this phone as the amount of improvements we have seen.. have been nothing short of brilliant... many thanks.
I am currently running aokp and it's excellent and also have cwm backups of other Roms on the phone. These are all Mtd Roms.
I have looked all over xda and it seems to me that we could convert the many good gingerbread roms to run in the new MTD partiton without reverting back to odin and wiping the phone only to have to do it all over again if we want try the many good custom and stock gingerbread Roms.
The flexability we would all gain from being able to flash other Roms without reverting back to odin would be great for everybody ... but there isn't a kernel to do this unfortunately.. I know I've looked back to the begining of all of the threads and can't find one ... or make one.
I have researched how these roms could be converted to run in the MTD partition and have a good idea how to pack them to run, I am not a rom chef or a dev so it would be just a re-pack. But the rom chefs would do this themselves if we had a touchwiz-MTD kernel made for this task.
I will not show how you go about re-packing a rom to run cause everyone would
try it without the necessary kernel and probably mess up their phone .. so best not.
Could we have one last missing -link kernel just to square the circle and run a stock samsung gingerbread rom in the MTD Partition... we would the be able to keep these as cwm backups and switch to any rom we like.
