Same as the N1.
Enter about:debug into the browser, then go into settings. UA string is at the bottom as well as many more options.

in the default browser?
i know this works in firefox on the pc, but tried this in the default browser and it doesnt seem to do anything.
Worked on stock Rom but not on the desire Rom browser

There's a dedicated option to switch mobile view on and off.
have you tried about:debug
about:config gives me a white screen
about:debug gives me my homepage which is google
Once you type the appropriate command in the address bar hit the menu button > settings> then scroll down to UAS string.
You will not get any kind of notification that you did anything in the address bar after hitting enter.

Copy and paste from the Whirlpool.net.au forum I think the default browser works best.

I have forced the browser on my tab to display all webpages in the full/desktop version – instead of mobile sites – here is now I did it – very easy to do and can reverse it if required. Open the browser and in the address bar type about:debug and hit enter.
Note: Nothing should happen Go to the menu key and press settings In the left hand column press Debug and then on the right press UAString. Here are all the user agents you can set. For sites to display like they do on your desktop press Desktop. Once your user agent is set go back to the address bar and re-type about:debug to remove your browser from the debug mode.

You still have to do it this way? I noticed on the Transformer you can get to the User Agent String without putting the browser into debug mode.
From what I can see there no other way on the Samsung.
How do you set the browser to only open desktop versions of a website? I can't seem to find the option anywhere
Type about:debug in browser. Nothing will happen. Then go into browser options and you should have additional options. Should be there.

So where would I find browser options. I've been in the browsers settings by clicking the upper righthand corner but that doesn't give me any compatible options before our after doing the debug

when you go to the settings after applying the command of about:debug, you will see on the bottom "debug" in the settings under advanced. Once you go there, click uastring. Change it from android to desktop. This will tell websites you visit that it is a desktop and not a android device and thus load the full page, not the mobile version.
But it isn't permanent.
Going through about:debug became such a hassle on my zoom that I'm using dolphin HD full time now. Just have to get your bookmarks in the stock browser so you can get the cool scrolling widget and set dolphin as the default browser.

Is it possible to change the default search engine in the stock browser, not to bing or yahoo, but to something like duckduckgo.com
Looked at about:debug and about:config but couldn't find anything to change keyword.url

And hit go, it'll look like it's not done anything, but if you press
menu > more > settings
They'll be a load of new options and one of those is the search engine.

Thanks, but as stated in op I have already looked at that option, it only gives you four options.
I was thinking more about how to change to a personal search engine like duckduckgo.com
I think it should be more in the about:config settings

cannot load some sites without being directed to the mobilr version. Would like to view sites in full screen format not the 1/3 page displayed in the mobile versions. Did not have this problem with viewsonic.
In the address bar type in "about:debug" without the quotes. press enter. press the menu button (top right) then settings. Then "Debug" then "uastring", then "desktop".
If you are on ICS, then just tap the menu button, then "load desktop site". (much easier than honeycomb )

Ive got so used now to
Load site > scroll down > look for desktop site button > press button > contune browsing. Lol
Another suggestion (easier too in my opinion) is if you download Dolphin Browser. When you set it up you can choose to have desktop browsing enabled.

I loved dolphin on my nook color. I've not tried it on this tab yet, but just might have to now.
