I have a 2GB SD Card and a 1GB SD Card that neither will work on my Wings. I have 3 two of which have Gullum's 2d Touchflo and 1 which has T-Mobile Rom. Could it be the SD Card or could it be the Roms that are messing up the SD Cards?

I've read that flashing with sd card it should be 2gb or smaller.
Would it be ok if I used a 4gb card and partitioned it in half so there were 2x2gb partitions?
4Gb SD card is SDHC compliant. Maybe update not work with old firmware on your mobile device. It`s safer to use old SD card less then 2Gb, because then is SD compliant (not SDHC).
SDHC cards require an SDHC capable device firmware.

you dont need to.
WP7 uses SD storage and its internal memory in a form of RAID
basically, if you install WP7 with your 2GB SD card installed and the SD card is compatible, then you will use the SD card anyway,

lm using I9500 with Sandisk 64 gb class 10 micro sd card. When i look at the the photos which are on sd card, phone restarts itself and sometimes phone doesnt play the music on sd card. I formatted it for 4 times. Card is in exfat format. I formatted the card yesterday but today phone wanted me to format it again.
been covered a lot
sandisks seem to have issues on this phone
