I've got a Europe model OP8 Pro running 11 beta 4 rooted and I'm looking to roll back to the current stable oxygenos 11 build.
How do I go about doing this and is this possible while maintaining root and data?
All the guides I've been able to find have all been about rolling back to oos 10

Sadly you can't go back without loss of data... OB and Stable are different branches and you'll be forced to wipe.
You can MSM back to Stable 11.

Hi!
I would suggest booting in to recovery and running the recovery option to download to back to stock rom (This may or may not delete your data so always back up!). However first check from firmware finder if EMUI 9 roms have been released to your specific version so you're sure your model has EMUI 9 available now. If so once you're in the stock rom it should update you to EMUI 9 and you can continue flashing Openkirins EMUI 9 roms. Please be aware Openkirins suggested Magisk installation does not work on EMUI 9. However there is another way to flash magisk to EMUI 9 roms.

If you are using Xiaomi.eu beta, then don't worry about it and just do a clean flash of the MIUI10 ROM, MIUI 11 beta is still on Android Pie, so there will be no problem going back to MIUI10.

Currently on Havoc Pie. Can I msm return to OOS(want to fully wipe phone anyways), upgrade to stable OOS Android 10 and installed twrp and install Havoc Pie?
I think if you MSM to Android 10 OOS, you will need to MSM back to pie, then flash pie havoc.

Well, in the past, I have always been able to run older version of android on newer bootloader/radio/modem images. Like, I have been able to run marshmallow ROMs on nougat boot loader, etc
My young son uses my 6t just for gaming. Right now it has TWRP 3.2.3-2 rooted with magisk and is running Android 9 Oxygen ROM Tmobile phone but its unlocked.
I'm not new to flashing but just wanted to get pointed in the right direction. I have been away from the scene for years. How do I go about flashing from Oxygen 9 to a stable Official or custom ROM on Android 13 or any stable android version for this phone?
Most roms require you to update to oos 11 first before flashing the custom ROMs. For android 13 I recommend crdroid which is the one I use, instructions will be on their XDA post which is on the website. I don't have the T-Mobile variant and lots of people seem to complain about it, good luck
