I'm wanting to factory reset my PH-1 but am leary since Essential has shuddered its doors. The phone is still running stock android 10 and the feb. 2020 security update. my question is; will it "re-update" to android 10 or revert back to original version and stay there?

Correct, factory reset only restores default settings and wipe user data.
Android version will not change.

I would NOT do a factory reset/wipe. Can you truly risk bricking your phone? Wait until a developer can dig into this ROM and kernel and take a look at MMC cap erase.

I allways do this for smoothness and speedy performance of the phone
It depends. If you install official updates ex. via OTA you don't need to do wipes. It would be unacceptable for most users to wipe all collected data from their devices once a month. My old S2 had it's first full wipe after 1.5 years of usage when I gave it to my father. It had great performance and stability all the time (only official updates).
But if you play with customs, well this is the price of having custom roms
What is the best way to COMPLETELY remove all your data and return to a factory stock. Thanks!

Yes, I did but after a few days the problem returns, I'm thinking of installing the sock rom from fastboot in case there was an error in the update that was made through ota.
