Did a search and couldn't find anything related to my problem.
I have recently gotten a SM-G950U1 variant of the S8, everything is working fine except for when the phone is connected to bluetooth. On bluetooth, all audio plays over the call channel versus the media channel. I've tried on two different cars and a JBL speaker, all with the same result. Turning off wifi calling helps this only slightly, as the audio is still muffled sounding unless I disable the "Call Audio" switch in each specific connection in the bluetooth settings. Obviously, ticking this switch off for the speaker isn't really an issue, but leaving it off for the car connections is a significant setback.
I'm just coming from an S6 that was on 7.0 that didn't have this issue. The phone is not rooted and I don't have a smart watch or anything like that. I did boot into safe mode and I think the issue was cleared up there, but was still active on my phone when I booted back to normal, with all of the accessibility options and permissions reset as a result. But other than the Samsung Sound Assistant app --which I deleted to see if it was the cause (it wasn't) -- I don't have anything that would change the way default audio functions would work, and I can't think of any specific app I have or a setting I may have ticked that would've caused this.
Have you tried using seperate audio settings? I think it might help...

I have this issue with my HTC BT Headset which when paired and connected will receive all sounds including games and system sounds. Sometimes even the ringer will only sound in the headset and not on the phone (this happened at rare occasions).
I have edited the settings of my headset and unchecked the option for media but then it comes back again when I connect again.
Now, I want to be able to divert audio back to the device when for example I play a game or play a media clip. The only thing I see on the screen in the message that audio is being played on the BT headset.
I am sure there must be a key sequence to bypass this but I can't figure it out.
Sorry I have no solution, but just to say I have similar issues. My HTC headset picks up the audio from Copilot.... which I suppose is no bad thing in itself, except that the sound drops out all the time... which is pretty useless on satnav! Not sure whether this is a problem with the phone or the headset (whihc is otherwise working fine). I'd just like to switch off the A2DP feature too.

I am having a problem with no audio being routed to my Bluetooth in vehicle. This is a critical bug for me due to where I live having one of the strictest distracted driving laws.
After turning on the device no audio is working during calls. Mic and speaker since neither person hears anything.
Media audio doesn't work either. But I have found a non permanent fix for that.
If I connect to Bluetooth and start music it is silent but if I go into the Bluetooth settings and choose the preferences for that specific device and toggle the "media audio profile" off then on and restart the music it will work fine until I lose the connection. I have to repeat every power on.
The same type of fix doesn't work for call audio though.
Edit: Just noticed if I leave the phone audio profile turned off that media audio works fine all the time.
I too second what shadowofdarkness has mentioned in the post before. I have an "HBS 700" headset. When both profiles phone/media are on, and you hit the volume rocker the bluetooth audio is disabled. You disable both and enable media audio alone and it works fine sometimes. Else unpairing and pairing back and enabling only media audio makes it work without a hitch. Enabling phone audio at anytime brings us back to this issue.
As the title says everytime I setup my preferences in developer mode it reverts back after every song.... Is there any way to fix this?

A lot of that will depend if your headphones can support those bit rates. Its 50% on the headphones. Could you set those options on another phone with this headset? Also, did you stop the music while changing bit rate?
EDIT: I just tried it on my phone with some cheap bluetooth headphones. The3 settings dont stick but I also know that these are cheap headphones that will not support some of the advanced features.
EDIT2: When I use a better set of headphones, with Apt-X for example, I can change the settings and they stick.

Nothing works
I have also run into this issue and reverted back to stock because of it plus other reasons.
You could solve this issue (errr work around it) by using Tasker and configuring Tasker to toggle the settings in Developer settings for you when a BT device is connected. I haven't done it, but I know it's possible as Tasker can do almost anything with Root access.

I have the T-Mobile edition. I had the same issue with my BeatsX, which use AAC. Audio was pretty bad.
I didn't find a solution to the problem despite researching for days, but when I flashed the international OxygenOS the issue seemed to have fixed itself, and my dev options show the headphones using AAC like it should.
I don't know if this would fix your issue, but that's my story with the same prob. Setting for example the AptX codec with my BeatsX doesn't work because, iirc, the codec isn't support by the headphones themselves. So the setting gets reverted. Maybe your headphones only support that specific codec as well.
Since moving to the S10+ from S9+ , I noticed the audio quality on the car bluetooth cracks at certain points. (Example, listening to Tron Legacy - Overture towards the end).
I have done some research and tried changing the codec but it always reverts back. I would have thought with the latest update this would have been fixed!!!

You cannot change the codec. The developer setting is not true or real - it is automatically detecting what the car and the file are able to play to the phone.
I don't know why people think that matters.
My bluetooth has no issues with quality. How old is the car? Is it using like Bluetooth 2.1 or something?

My car is a 2016 registered car, i've connected my wife's iphone and the sound is better, i have also connected my s9+ (refurbished as the s9+ is an insurance replacement due to my s9+ being stolen and i am selling it) and the quality is better.
Maybe I should download the firmware and reflash?

One time a few weeks ago my sound was kind of quiet and I wasn't sure why, I eventually forgot about it but a few days later I was messing with settings in "Sound Assistant" and the regular system connections, and I did something with one of the controls like Media Volume Sync or maybe in dev settnigs for Disable Bluetooth Absolute volume, and everything got WAY louder.
Also, sometimes you may need to reboot after making those big changes just because any phone can glitch and not apply right.
If you don't have Sound Assistant it's in the Play Store and the Galaxy store:

I've tried the Samsung app and the other options nothing improves the quality. I have downloaded the last firmware and flashed, still having the sound quality issues.
I have also updated the firmware on my car but that hasn't changed anything, but its definitely the phone that is an issue, i've even dug out my S7 and paired it to the car with no issues. When I connect the S10+ via aux the quality is much better.
So I just got some new earbuds and they connect perfectly, except the sound comes out of my phone speakers. The weird part is they are fully functional for phone calls. I'm on pixel experience as well.
I've tried;
-connecting to another device (works fine)
-doing everything ever posted on an issue similar to this online (nothing works) eg, making sure media audio is enabled, restarting phone, restarting ear buds, resetting bluetooth data.
Only thing I haven't tried is factory reset which might have to be next :/

When a friend of mine uses TeamSpeak on his phone he has to Enable "Use Bluetooth" via the TeamSpeak options first!
Maybe you have to do something similar ?!
