Yes, root with Magisk and then use this guide to apply OTA. https://github.com/topjohnwu/Magisk/blob/master/docs/tips.md

This looks very complicated for a typical user like me. Is there any other way or a chance of there will be an easier way to complete this task?

Well, don't root your phone if you are not confident enough to follow 3 steps guide. It probably can't get easier

Will I lose anything besides 1-tap OTA update (as it works right now in unrooted phone). I just don't want any other surprises after it will be rooted

In theory - SafetyNet can get broken, banking and other apps might refuse to start with root, there is slow camera start with root on Oreo present,.. In most cases there are fixes available, but it involves a bit of user involvement (search for an answer and apply the fix).

Make it safe and simple.
Possible to re-lock it.
Have it done in an official way.
Support as many Sony devices as possible.

I looked in the build.prop and it says ro.carrier=unknown
I have sprint services but am unable to send picture text messages. I had to get a 3rd party messaging app to be able to send picture messages properly. So it works with my network but it is not perfect.
Anyone have any suggestions?

That's weird. Root fully enabled mine, and I've gone through the process twice. What firmware version are you using, and did you apply root to a fresh restore, or just on top? Did you disable those 3 packages as per the instructions?
I uploaded an apk of Galaxy Tools. USE AT YOUR OWN RISK Seriously. It may be able to help, or at least shed some light on the issue. It is potentially very dangerous, so do so with caution.

I believe it was a clean wipe. Yes I disabled those 3 packages.

Tonight I got a popup on my phone for a system update. I rescheduled it for later. Does anybody know if this update will cause problems with my rooted device? Will I have to re-root?

Yep, thats how you would stop the pop ups.
You most likely wont need the update as its probably just a security update

Working pretty well, seems to be a little bit faster than MM

I'm rooted via instruction from here: https://forum.xda-developers.com/tmobile-s7-edge/how-to/how-to-root-s7-edge-t3410470 and continually have to adjust settings just to have mediocre performance, not even to speak of other issues there seems to be no workaround for (like the OS not being able to handle background apps properly so I'm getting notifications late, or not at all...But I DO get notifications from apps/games I haven't opened or played in a week). I also signed the petition to unlock the bootloader. I WANT the keep the fight going, but I NEED a properly working phone more (ultimately, my way to really show my dislike of Samsungs lockdown decisions is when I buy my next phone from someone else!).
So I ask, what should I put on my phone for the most reliability and performance? Is that the current stock Marshmallow? Nougat? Or something else?

Stock whatever if you really wanted root sorry to say this is not the phone for you.
Stock TMO Nougat, very closely followed by stock Universal Marshmallow. Some people are experiencing very minimal lag with rooted TMO Nougat, which gives me hope for rooted Universal Nougat.
Definitely rooted nougat.

Seems to me root isn't the way anymore forbs7, lot of bricked phones, everyday people saying they're stuck in a boot loop or its laggy after root. The only reason I would want to root is to disable native upsampling across the whole system. Right now disadvantages > advantages imo. Other than that there is nothing else I want to do that I can't already do with Nougat and formely MM on my S7E.
I wish they would release the U version...
