European have exynos. USA Verizon and sprint hate exynos, that's why they have snapdragon. Exynos works fine on t-mobile and AT&T, so you can use those networks.

Mostly I will be on AT&T, but I want to use features like Samsung pay, voLTE, WiFi calling etc. I guess these won't work on European model.

i have bump verizon and gone back too AT&T but am doing AT&T go phone plan any ways am thinking of getting a samsung smart phone wish would be better for AT&T the samsung S7 G930F or the samsung S7 G930U all so wish phones will get android faster out of the two

F has a little better processor. U has many more available cellular bands.
Can you interchange ROMs between S7 and S7 Edge? Meaning that could I flash a ROM for S7 on the S7 Edge and the other way around?

Well you can, but then your screen would turn yellow and it would not respond to touches. It's because they have a different screen size and a different kernel, so no.
