CM7 is the only CM ROM designated 'stable' for the Nook Color. But there are variants of the CM7 ROM like Mirage that are also very stable.

Try the MiRage rom again and try the cpu and voltage settings recommended in this thread (scroll down about half way) http://forum.xda-developers.com/showthread.php?t=1443292
This has been the best rom I've used to date performance wise.

This is more to start the discussion and eventual development of a new rom... Just wanted to share my thoughts on CM11 Unofficial first by saying I am really happy there is life in this modding community again and CM11 give me hope and drive to look for newer alternatives to work from right now i'm on CM9 and it runs 100% smooth and stable no crashes or reboots so I am thinking of developing a new rom based off it... Eventually I will move to CM11 but right now there are a few kinks in it... I love the kit kat progress and hope to see something stable soon that I can tinker and make even better I am all about customizing things....

Which ROM (besides the MIUI) is most stable and suitable for daily driver?
Thank you for your help.
Cyanogemod Nightlies before 2208 are pretty stable, i'm running them since i got this phone a month ago, ressurection is also very stable.
Try all this ...

Nexus Experience 10.3.3 (Buttery)
XOSP (Battery)
You won't be Disappointed , Curse me If you are .

Is there any custom ROM 8.1 that is stable enough to flash?
Most of them have the same issues , but i think RR is the most stable of them all. Just my opinion , tho.
For me? Cosmic OS (if I'll be able to figure out why localization indicator is visible constantly)
Tried a couple and RR along with crDroid (not found here but on android file host) were the most stable for me. I also flashed pepsy kernel wich is very stable too.

I want to know a good ROM withou random reboots and freezing while I use it... for things like Twitter, Youtube and browsers
I'm using the latest Slim 7, and andi34's anykernel with oc and uv, and the system is fluent. No problem with youtube ( somehow 60fps hd is not an option), office, and browsing the web. Not the fastest experience but it is useable. P3110*

Try Slim 6 by Andi. Better than 7 in terms of stability and speed

I have tired all of the roms. But I prefer nougat because some features and in my opinion not that noticeable the differences of the speed between N and M android. Maybe I felt Nougat faster sometimes. But thanks for the recommendations.

I feel the most stable would be a KitKat rom considering the ageing hardware.

P5110 (espressowifi) user here.
I tried a lot of roms now, and settled with SlimLP because it is the most stable by far, gives also good at performancelevel and not like kitkat has the modern design.
Slim6 does give me app crashed
Slim7 runs really smooth and good, but has a weird bug where the performance can very each reboot. (this applies to all Nougat roms)
all other (Cyanogen, AOSP, ...) do not that well performancewise as the slim roms.
I'm running Slim 4.4... is it worth updating? lol
Netflix doesn't seem to work anymore on this.

well i suggest slimkat cuz it has nice performance with gapps unlike some other roms. If you dont want gapps i would suggest omni 6. Slimkat is just a bit snappier for me but since its kitkat its hard to use without gapps. I have yalp store and newpipe for slimkat.

in my testing i found that gapps work best on kitkat roms like slimkat. if you want to upgrade and want it to be snappy too i would sugges not flashing gapps. One of the roms that the most little with gapps is OrionOS for me.

the best slim rom for me was slimkat. Works nice with and without gapps
Holo isnt that outdated especially with slimkats black theme. slimlp was the first rom i flashed on this tablet but after a few weeks it started lagging. Now im using slimkat with or without gapps and omni 6 with out gapps. OrionOS is pretty good too if you want material and smaller lag with gapps compared to most roms in my testing.
