Would it be possible to downgrade from marshmallow to kitkat?
Condition
-No custom firmware
-Current marshmallow is official and planning to go back to kitkat official stock firmware
-knox is still 0x0 after downgrade. Is this possible?

Use odin to flash the KitKat firmware. That'd probably work for you.
But be careful selecting the right firmware for your model!

I have a Note 4 910C that I upgraded to Lollipop (official version but from another country) and I'm thinking about downgrading to Kitkat because the official lollipop version in my country is not available yet and I also have problems with Waze. Will downgrading from Lollipop to Kitkat (official version of my country) activate the knox flag or is it safe to do without losing warranty?

It is safe AFAIK. Download the official KitKat rom for your region and flash it using Odin.
Edit: do remember to perform a factory reset before and after flashing the official ROM.

there is no root for 5.1.1 firmware yet
you might consider installing custom 5.1.1 roms availables here, that comes pre-rooted

So I have an Australian SM-N910G running 5.1.1, and I want to get MM as it has been released for the Indian version of the SM-N910G. Reports have said there is no issues. If I were to do this, would I flash the 5.1.1 Indian firmware and update or am I able to just flash the 6.1.1 firmware over my stock 5.1.1 Australian firmware?

You just need to flash the Marshmallow firmware. I'm in a similar situation, have a N910C on 5.1.1, UAE version, about to flash 6.0.1 using the Poland N910C firmware.
can it be done without bootloader upgrade ??? and is a downgrade possible after that ?
The indian 6.0.1 MM firmware can be odin flashed over your existing 5.1.1 firmware without upgrading your bootloader.
You can still downgrade back to 5.1.1 after you flashed the MM firmware.

Download the latest 5.1.1 Stock Firmware for your device from SamMobile website. Always download any unbranded Firmware. And Flash through latest version of Odin ( Follow the instructions).
Very quick question: i have N910F no brand with Android 4.4.4.
Can i skip mid-updates (like update to lollipop that OTA want to force me) and directly flash the new 6.0.1 with ODIN?
Will this odin-flashing void my warranty writing the Knox flag also if i'm flashing an OFFICIAL firmware (my phone has never been rooted)?

Yes, you can skip from Kitkat 4.4.4 directly to the latest version of Marshmallow 6.0.1 by installing it manually. It will not trip Knox as you are installing stock Samsung firmware onto your device.
