I recently found out that the original verizon Note 3 rom has an option to select which frequency to use in the Wifi hotspot ( 2.4GHz or 5GHz).
Is it possible to enable this on any rom ?

NFC Option is switchable in the settings menu, but after pushing it in on-position its getting greyed out..

Nop .. this is refer to the different hardware between variants. So, if you want to have LTE connection you should buy a new device.
