You are on 4.4.2 or 4.3 or 4.2.2 ??
On 4.4.2 cf auto root might not work
Install philz touch recovery. It has an option to reroot/install su binary

Sorry, I'm new to Odin, but can I just flash the boot.img or do I have to convert it to a .tar.md5? And also, will converting it give it a different signature meaning it will trip Knox?

Only using Odin, which requires a PC. There is no other way to replace the stock recovery.
I have no PC so there has to he another way...

[Q]Odin not working on U.S. Cellular S5 could someone help me find what I did wrong?

Not sure what I did but had to Odin back to stock lollipop but then couldn't root using twrp or cf-auto root. I get a fail (auth). Tried factory wipe. Any help would be greatly appreciated. Thanks
