I would prefer a rom that has OTA updates as i don't want to keep installing new firmware but if it doesn't then so be it

I have an italian device and I want to flash to a UK rom, as for example some software only comes in italian even If I change the language of the rom.
Anyone knows if I can do this without breaking the warranty?
