My Nexus 4 is a bit knackered so I will probably buy a S5. Is it possible to transfer all the data from it to the S5? e.g. ebooks, movies app details (and settings if possible)?

Yes it's not hard to transfer all the data to the new phone.
To transfer all the media e.g. music, photos, videos etc just transfer them to a computer via USB, and then you can transfer those to the new phone with a USB cable (you could transfer them directly via Bluetooth but USB is much faster).
Transferring app details is harder, you need to root both your nexus 4 and S5 then make a full backup with Titanium Backup, that stores all de app data in /sdcard/Titanium Backup/ if you transfer this folder to the new phone (via USB or anything else) you can use Titanium Backup to restore all the app data in the new phone.
To transfer apps you can use adb backup/restore, completely without root and Titanium Backup. This guide should do it.

You can sync contact numbers with your Google account. For sms, you can use titanium backup or sms backup & restore

Why not use iTunes or iCloud?
Your cydia installed stuff won't be backed up, you need to download either aptbackup or xbackup. These apps will backup cydia tweaks. After installed, you have to run the program the program and backup your cydia stuff. Then, if you have to restore your phone and want to re-jailbreak it, you install this program again after you jb it and restore it and it will re-install your jb tweaks. Cracked apps are a whole different story.

My backup root or titanium backup pro seem to be the two standard apps. My backup does sms mms contacts etc which titanium does not.
Edit: your contacts should be syncing to your google account

My thanks. I was refering to syncing between pc and phone instead of an app whose files can then be copied over to pc
Ahhh not that I've used. Titanium can go to dropbox which will sync with your pc if you have dropbox installed.
There are also apps to wirelessly sync your internal memory to your pc.
Try Samsung kies the version you can get from the Canadian Samsung site. You cannot upgrade your phone with it but you can sync your phone with your pc when it comes to email, text messages, music, video and pictures. It also features a video converter that converts almost everything so that it can be supported by the vibrant.

Your contacts should be saved by Google. Not sure about texts.

I think the texts are gone.
The contacts are probably gone. But, if they are saved to Google, they might be recoverable. Goto your gmail and check the contacts tab.

I have never heard of that working, but try it. Instead of asking us, when we keep saying no, just try it.
But, I really doubt it.
If the contacts are very important, don't you have some other way of contacting them? Like social media. Or is there anybody else who may have the contact info as well?

Deleted items are only recoverable until over written and being a text message I would consider them gone for good. In the future you should always back up contacts to Google if they are important, being u never know when u may lose or break your phone. Hell it could even get stolen. Anything important should have a backup...

When deleted messages, deleted from android, the os removes the pointer to the files from the file allocation table and flags the deleted files as no longer needed. in order to recover the deleted messages, contacts, you need to avoid writing data to the card or internal storage, plug in your device and set the usb setting as mass storage so that both the sd card and built-in storage should be recognized and mounted as removable drive, scan the drive, then recover the deleted messages from android.

I tried but only get a few contacts, any help?
I have a rooted and S-off HTC One. I want to keep practically all my data, dont care about the apps etc I guess I can get that all back manually but if there is a way to transfer that also thatll be great. Anyway I want to backup my contacts, text messages, videos, photos you name it. Is there a tool or handy app/s out there that I can get that can do all this and somehow transfer it to the Samsung S7 Edge that is unlocked? Im not going to attempt rooting and s-offing this phone it seems way too complicated.
There many apps on the Google Play to backup/restore sms, contacts, call logs onto different phones.
Document and picture files could be copied from the old phone to a PC or memory card.
There is also a Samsung app that is designed to transfer many things from a (non) Samsung phone to a Samsung one:

I am not an iPhone user, so what i say is only theory.
If you backup on icloud and the file/folder structure for the backup is the same as is on android, you could just paste the whatsapp directory into your root android folder and then install whatsapp.
Alternatively, if you have access to the whatsapp folder you could just copy that to your computer and then move it to the oneplus 5.
On Android phones , to migrate whatsapp i simply copy the whatsapp folder after making a current backup on the source phone,moving it to the destination phone and then install whatsapp. it is able to restore all data and media.

Have a look on the comments in there - it's a scam. They tell you to backup to iCloud then delete(!!!!) the app on iPhone (==removing all messages fro the phone) and then magically they say that the android phone will be able to get the backup from iCloud.
In reality they want you to buy the product because it is capable of restoring the messages somehow(which you just deleted them)

the whole whatsapp iphone to android thing seems to be complicated in general as of reddit. The reddit post/comments show a few solutions though.
Use Wazzap Migrator. I used it like 4-5 years ago when I switched from iOS to Android. Works like a charm.

Used iBackup Viewer to extract the ChatStorage.sqlite file from an iPhone Backup I made and Wazzapmigrator to restore it on my phone, did cost me like 3 bucks but worked really well!
Updating that I used wazzzap migrator. I needed to create an iTunes backup then find a software which can extract data from the backup file (this the hard part) . The wazzzap worked like charm (very easy) though cost a few worth-the-money $ for chats and media as well.

ANSWER:
1. Log in and back up your data to Google Drive
2. Download the file from the apple account.
3. Rename the file to match the backup on the google drive account and upload it and "Over Write" it.
4. Re-sync your whats app.

I've never tried to do this but can't you just set up the in-app backup and let it backup to Whatsapp servers? Then one you install WhatsApp on the new device it should ask you to restore all backup data.
