It is hiding and only apperas if I swipe it down, but then it disappears again.
I went to Settings -> Interface -> Notification & QS drawer; I've changed many settings by the Notification bar on the top is still hiding.
I'd like to have the battery icon, clock and wifi status always visible.

This is called Immersive mode, it's a feature in 4.4

So like everyone here...I wanted to re order the toggles on notification bar and found this while playing with the phone. Samsung put a nice little toggle customizer in here. Here is how to access it:
Goto settings. Press menu key. Switch to tab view.
Click device up top, then "notification panel" . It will show a bunch of toggles and you can reorder them and choose what you want. All without installing or doing anything!
Or pull down the toggle panel (2 finger or the button in NP) and then push the little pencil icon at the top, jumps you right there.

is there a way to completely remove the toggles? I would rather just use the toggles on my circle battery widget menu
How do you disable the quick connect bar in the drop down menu? I used PDP to disable, but the icon still show? TIA.
Just double drop the slide down menu so it shows more icons and it's at the bottom of notifications bar and click edit at the top.

Is there an easy way to show the battery percentage in the status bar at the top of the screen? (i can't remember if this is called status bar or notification bar but its where the clock and notification icons show up)
Yes, pull down notification tray and long click (or press several clicks - can't remember) on settings icon. It will add system ui tuner to your settings menu. There you can add battery percentage icon to inside the battery icon
Yes. Pull down quick settings and hold the settings icon for a few seconds then release it. If you scroll down to the bottom of your settings page you should now have a section named 'System UI Tuner' where you can do this.

On Oreo this option is also found under battery settings.
On Nougat battery text was inside the icon, on Oreo it's on the left side and to my eye a bit bigger than clock. I couldn't stand this design flaw, but fortunately Gravity box can fix it and show text inside the icon again or on the right side and with smaller font.
I increased the number of rows in the layout of the tiles in Quick Pulldown, causing the buttons to scroll off the bottom of the screen (screenshot attached). Since the Edit button only appears when the pulldown is expanded, I can no longer access it. I can't find another way to edit the tiles. Is there a way to fix this or am I SOL?
Fixed it. Here's how:
In Settings > Omni Gears...
> Style - disable Header image.
> Buttons > Keys - disable navigation bar
This made the buttons at the bottom of the pulldown visible and removed the superseding navigation buttons that overlayed the buttons in the pull down.
I was then able to change the number of rows in the pulldown.
This is a UI flaw. Since there's only one way to get to the Edit button for the pulldown tiles, it should not be possible to accidentally inaccessible. An obvious fix would be to make it appear even if the pulldown is not expanded. Alternatively, the pulldown should never expand beyond the top of the navigation bar.

Right now, the home button does not have the circular ring around it like it is in a Pixel navbar. Is there a way to do it?

Rooting , substratum and some navbar theme's will get you pixel navigation. Not sure about the little animation.

Settings -> Advanced (Additional ROM settings) -> Interface (Navigation bar). There is an option "Navigation Mode", go in there and select SmartBar, this with additional smartbar settings (button touch animation selected as "pixel" will get you pixel navbar mode.

What you said shows options for animation. What I'm looking for is a ring around home button. That isn't available in the ROM.
