Out of curiosity, why root? Not much of a need on the Nexus 7. Enjoy your new tablet and don't stress over the little stuff, amigo!
Also, not sure, but I think the toolkit supports the LTE variant. I may be wrong though.

So I can run custom roms, download blackmart, titanium back up, etc!

Stick with stock, buy your apps and games, and use Helium. Problem solved.

If you're going to root, it's better to do it as soon as you get your device. Root requires unlocking your bootloader and thus wipes your device.

Interesting. There is no root guide for deb (the LTE version of N7 2013). I see the root guide for flo, which bizarrely recommends using autoroot instead of just installing the superuser binaries (why? @philos64 ). I'm tempted to write one for deb myself, despite not having deb on hand (which is generally bad form).
If you want me to write a root guide for deb, thank this post and I'll write it. Alternately, a user with deb on hand and a good understanding of the two required fastboot commands and TWRP could do it.

Spoiler alert. Rooting deb is the same as flo, but I'm itching to create a root guide that doesn't create unnecessary steps or involve a root kit. So yes, I'll do it.

Go take a look in the Nexus 7 section. The first thing I did was unlock and root it. Keep in mind that unlocking it will wipe your data, so I would do that first.

All of the things. Assuming you already have root you should dl the standard stuff - Titanium Backup/Pro, ES File Explorer, XDA Pro , Voodoo OTA, Rom Toolbox, SuperSU (that's just what I prefer instead of just superuser), Terminal Emulator, and the like. Other than that it's all you. Whatever puts wind in your sails.

I just got a 32GB Nexus 7 also trying to decide what ROM to install lol. I love Scott's roms on my Infinity so I will try his first on this.
Running a stock rooted 16gb and using ROM toolbox Pro for Backup, ad blocker, launches nandroid backups, and more. SuperSu Pro for root. SwiftKey Tablet is amazing. Tablet talk is also really handy.
Nova Launcher and HD Widgets look very slick.
Don't forget about stick mount, I picked up a Samsung otg on Amazon. Speaker Boost also helps my earphones while watching movies on the plane.

I know it's kind of a cardinal sin on XDA but I am still running rooted stock 4.1.2 on my N7 also. I've tried a few custom ROMs but I always end up going back to stock bc it seems like it runs smoother.

fastboot oem unlock, fastboot flash a custom recovery, flash either the su binaries or a custom rom using your new recovery, reboot and profit. the method is the same for all nexus devices.
I don't mean to seem ridiculous but isn't there a much simpler method. I'd prefer the easy way out this time of possible. I've done enough with an HTC phone.
I thought they're was a toolkit that made it simple? But I can't find it now.
Oh, and thanks for the responses

if youre worried about the size of the sdk find adb.exe and fastboot.exe and the drivers you need, a quick search will get you all of the above

I don't have anything without being there. I used this by DL the entire root zip chain fire has prepared. I extracted the "guts" and then used PC Odin to Odin in root/supersu...then after reboot I DL ROM manager and used it to one click in CWM.
You could also Google QBKing77 and tag root s4 behind it and his video is on there its perfect

Z for root and the other root apps don't work on the nexus and its a catch 22 situation as in to root without a p.c you would need a custom recovery which again you would need root to do without a p.c. .
Could he not pop into a internet cafe or library and do it quickly with a toolkit available on here.

Really tried everything to solve the problem of drivers and nothing worked, see this thread which i create in December:
http://forum.xda-developers.com/showthread.php?t=2555431
Nothing worked. Very strange his problem
I would definitely try another USB lead as that's most likely the problem also try the USB ports on the rear onlf you're p.c as sometimes that can help. Apart from that it looks like you have tried everything I would suggest.
Good luck.
