How soon after rooting do you have to freeze the OTA and is Titanium pro the only way to do it?

I'm not sure why you think you need to freeze after rooting...like rooting is going to cause the OTA! If I had a phone that was vulnerable to MF3 OTA I'd pull out the SIM card and turn off wifi so it had no way to download anything...IMMEDIATELY! Before I even turned it on!
I'd then root it with motochopper and sideload Titanium Backup to freeze the files before allowing any data connections.

You can use Root Uninstaller to freeze 2 apps that have to do with OTA. It's free.
Im confused, are the American carriers pushing the OTA to devices without the authorization from the user?
When I first got this device (while i was reading and getting myself up to speed on the rooting process) the OTA notification would pop up, i would select postpone for 4 hours and do the same when the next notification popped. To be safe would power down at night...
Did that for 2-3 days with no issue...

Yes. We have 72 hours after the first decline to hit the cancel button. After the 3 days, it automatically downloads and updates itself.

Mine shipped with MDL right from AT&T. All I did when I got it was take out the SIM before I first powered on the phone. Set up the device, wifi, Google account etc, Then I rooted, and installed TWRP to make a full backup. Then I installed SHOStock.
If one plans to install a custom ROM, there is no need to freeze the OTA apps. Only freeze them if you plan on staying stock with root. Root is available on MF3 but is not recommended. If you screw up, you're screwed yourself as there is currently no way to recover.

Hey everyone. I just got an OTA update for my Note 8.0 LTE (AT&T). It's a small update (16.3MB). The new firmware build is I467UCAMF2. This is probably just a bugfix update but OTAs are almost always a good thing.

Update the Software for the Samsung Galaxy Note 8.0 (i467)
Update summary
The latest software package updates the baseband version to I467UCAMF2, and includes improvements to the initial setup process on the device. The update is available for download over a Wi-Fi network connection.
What to expect after the update
Although there should be no impacts to settings or data, we recommend that you back up your media files to an SD card, a PC, or using a favorite application (from the Play Store), prior to upgrading the software. For information on backing up and restoring your phone using Samsung Kies, click here.
How to update
Customers will receive an alert and be prompted to download the update, or have the option to initiate the update manually. When prompted, you can postpone the update up to 3 times, and 4 hours per occurrence. After the update has been postponed for the maximum allowable time, your device will automatically download and install the update.
Note: Before the update can begin, your tablet must be connected to a Wi-Fi network.
To initiate the update manually, go to Settings .
Scroll to the "System" section, and then tap About device > Software update > Check for updates.
Tap OK.
The device will determine if new software is available, and begin downloading the software update. Once complete, the device will restart.
Please wait until your tablet reboots completely, and then tap Done to finish.
How to verify the update
From the home screen, tap Settings .
NOTE: Alternatively, from the home screen, press the Menu key, and then tap Settings.
From the "more" tab, tap About device. The following information will be displayed:
Android version: 4.1.2
Baseband version: I467UCAMF2
Build number: JZO54K.I467UCAMF2

OK so allow me to translate that into English:
"Because we're A, T and f***ing T, we decided to make Samsung replace Google's normal Android setup app with our own called AT&T Ready2Go. The problem is, again because we're A, T and f***ing T, our app sucks. If you have two-step verification enabled on your Google account, you won't be able to sign into your Google account during setup with AT&T Ready2Go. I guess we underestimated how many people actually have it turned on, so oops! Our bad. Here, it's enabled. Happy now?"
I manually updated a couple of hours ago. After playing around with the Note 8 with the update for about an hour I no longer experience the screen stutter/freeze/pause/etc. issue. I hope this in fact is fixed, but so far so good.

I'm still getting the unresponsive screen issue post-update. I've thought about doing a reset, but haven't actually done it yet.
Would be nice if someone had the OTA zip, as it is possible a root could be made from it if the right images are included.

A little of both. The bootloader is encrypted and locked on the AT&T model, but also, very few of us on XDA actually have one. Let's be real. People around here thumb their noses at tablets with an LTE connection a lot of times. They just have no hipster cred in the Android geek community. The in crowd just buys a WiFi-only tablet and tethers it to their phone. It's the geekier thing to do, even if it's a pain in the @$$. You can talk about why LTE tablets are useful until you're blue in the face but it falls on deaf ears more often than not.
Unfortunately, I'm not very optimistic that we'll ever see root unless there comes a time where the WiFi-only root method works on the AT&T model.

Is it encrypted? I got this tablet 2nd hand and I may never even put service on it. If I can't root it, I'll probably trade it for a wifi version. I know AT&T and Verizon pushed an OTA to the S4's that prevented root. Luckily I was rooted/rom'ed prior to that. My GN8 doesn't have the latest OTA. I'm still hopeful for root and unlock/simunlock so I can grab a pre-paid card for this tab.

I don't know for sure, I didn't have time to try. Update in my country is at very slow pace, and after I root my device I haven't get update while the newest update rolling out at other country but not in my country, so I decided to install custom ROM to get latest update asap

Yes, I'm using titanium backup too for backing up and restoring apps, it's very usefull and it's worth to buy the pro version.
I think you'll also need OTA Rootkeeper to protect the root if there's OTA update so you can root your device easily, still, haven't try these yet because I already use custom ROM, but I still have it just in case I'll need it sometimes in the future. Me, I use voodoo OTA rootkeeper, the first one I found in playstore, don't know if there are any others.
Still don't know many much since this is my first time using rooted android and still learning about this device, that's least info I know and can share with you.

This latest update from 14th Feb is 15MB. I guess that's the one you're asking about. If so, my phone was never prompted to "accept" the OTA update. It just updated by itself without my consent. But other folks have said it will forcefully update after declining 3 times. After update my phone was stuck in TWRP bootloop. But don't worry there is a perfect solution for that as well, if that's what happens to you.
Totally upto you if you wanna take the update or not, no changes on the user experience at all.

That's the one I am talking about. I'm not too worried about the update, just if my phone would be borked if updated with root, but no TWRP/CWM. I haven't been prompted for it, I was just asking for my own knowledge, and like you said, there is a solution for it should something happen.

Those who got the device with a locked bootloader knew what that would imply and what they are getting into.
Now you, with a locked bootloader, wish that there will be a big security flaw for all devices (also the unlockable) just so that you have an easy root? That is really selfish.

Dear Technaudio,
how does one go back to 4.1.2?
I really want to go back, these new updates are doing the Z no good as far as i know. The UI looks worse, the camera makes a chirping sound when started fast and now the battery drains like a moterh****er too.
One thing I keep hearing which does not make sense is what is this battery drain that everyone keeps complaining about, I have had no problems since updating to Kitkat. What is normally recommended when doing and upgrade like this is to do a factory reset when you flash so you start fresh, that's what I did and I have not had one issue. I would say to guess this next update to come won't fix the problems you are having or it will create new issues as each update does. When I flash this next update I will be wiping all user data and apps and starting again as that is the easiest way to make sure any new issues don't affect your phone. I get no lag no battery drain no Google server issues nothing my update that I have is the best update Sony has done to date. If you are having these issues factory reset your phone and I bet you 100% all your issues will be gone!!!

Flash a .FTF file using flashtool.
Search the forum (XZ forum) for 4.1.2 .FTF roms, flash your device and done.
Be careful tho because if you don't untick that you want to keep your files, you will lose everything on your memory (SD card not included I believe)

I'm currently on a custom rom at the moment, I've not tried with 4.4.2 yet, as it only got released for UK in the last few days, but it's worked for every ota update before. However, if you've changed anything in /system it will fail.
I will do it sometime soon as there's a few annoyances with this custom rom, as there always is, and I've never had any problems with stock and root by doing it this way.
