I don't know which official ROM I must update to but I heard that official unlocked bootloader ROMs is better. So which ROM is unlocked bootloader.

I would like to know too. If the LTE band is slightly different, can flashing rom adjust those things?

If your bootloader is not unlocked and you have no custom recovery, then I doubt that you will be able to flash any Verizon ROM. Unless you have something like Safestrap of Loki available for your phones.
Just wondering if these roms will work on my at&t Galaxy Note 3? Lot more options here

They won't work because you have a locked bootloader which will not allow flashing the required boot.img.
What ROM are you talking about? Even if you did the updates you can flash back and flash Roms.

You will get official updates but once you install them but once do you, you lose root and have to flash #supersu all over again
