When you first setup your new Cyanogen Installation, it allows you to set up your account and then it takes you to a screen where you can download the apps in the google apps package. It's like it restricts your market to only google related apps.
The problem I had no internet so had to set that up later, and now I can't install and update all the apps I want, because if I put Google Apps in the market, it shows me google things and non google things...
How can I get that initial screen again?

Go to accounts> Add accounts. Add your google account. That won't give the initial setup screen but you will add your google account anyways.

I just rooted and installed the market, however I setup the wrong account - how do I change the account? Do I need to remove the market or google framework?

try clearing the cache and data or logout of gmail if you have setup one, or rerun the wizard which runs when you firstly install gapps. I have done it before but i really don't remember how

You can change your account info from the settings. Go to setting and go to the accounts add the correct account and then remove the account that you no longer need. At that point you may want to clear the cache and data from the market app in your manage applications settings.
settings and accounts from the market? I know most android devices it's under the main settings, but not the fire. I haven't setup gmail yet, I need the account for the whole device.
The easiest way to change accounts is to go to Settings>Applications>Manage Applications>Gmail and clear all data. I also did it for gTalk and all other Google related apps. This created a notification that I needed to redo the setup wizard with a link in the notification to start it. This fixed everything and didn't have to worry about a hard-reset.

No settings in the market, or in the main settings (like other android devices). So if install gmail, that should let me delete the account? I'm wondering if un-installing google framework might do it?
Got it to reset by uninstalling google framework and the market, then re-installing.
I signed out of a Google Account after adding another one, and it kept all my paid apps etc. Is there some downfall to this, or is this an easy way to share my apps with my family? Thanks!

I have 4 Google accounts on mine I generally only use 1 for purchasing apps but occasionally accidentally use a different one. You don't 'lose' apps by changing account.
Once you've downloaded an app, it is possible to take the APK and install it on another device. Some apps phone home though and may call you out on this approach!
All apps you get from the play store are linked to the account and devices you were signed into when you got them. Many paid apps check for the linked account when they run out update to prevent you sharing them.
If you have the same account on multiple devices you can share, I do between my phone and my tablet, but my wife for example has her own accounts and own paid apps.
I don't want someone else with my Gmail account on their device. Mine is setup with 2 factor authentication anyway which requires a code which is sent via SMS to me to compete for extra security.
If you use your pc and log into the play store on the web you can see what apps are associated with that account and which devices they were loaded on.

I needed to change the Google account in my NSTG but couldn't find an obvious way to do it from the existing apps or tools in my rooted device. Removing accounts.db from /data and rebooting seemed to do the trick - I was then able to add a new Google account by using the Market app. Mail, calendar, etc. sync, Google Talk works and installed apps can be updated via Market. I don't know what effect this has on the B&N account and on-line library as I don't use their services but at least the stock reader app and library continue to work OK.
You might have been able to do it through the Gmail app's settings.
Thanks. At least in the Gmail app that I have there's only an option to add an account. Maybe it would allow me to delete the old account after adding a new account but I'm not going to test that now that everything is working perfectly. If someone could confirm that - whether one Google account can be deleted if there are multiple accounts present - I'd appreciate it.

My Axon 7 arrived from China today, but it has big issue. I can't log in to google account, it stucks at "checking data" window. Can't use playstore, gmail, install apps... Internet connection is ok, checked everything except rooting. Maybe someone could help here?

Not sure but does the Chinese version even come with google apps? I thought google apps are blocked in China and don't come pre-installed.

OK, this is getting old now... After installing google play services, gmail and play store you need to go to mi-assisstant. Open the autorun section and tick all the above. You should be able to then log into your google account BUT it may take 1/2 hour to an hour before you can use properly. You will be prompted to update google play services when you try to start gmail. Until google recognises and registers your phone this will get an error when trying to update. try it about 30 minutes after you try to do it the 1st time and it should update as well as all the apps you installed. Contacts WILL NOT update...

Google contacts are not shown
This is more or less information for those new to the NST/G and maybe contemplating whether to install Google Apps via NTGAppsAttack.
At the end of June 2017, Google ended Market access from Android 2.1 devices. That means no more direct access to market apps from the NST/G, not even through the SearchMarket app. It's over. Of course there are other ways to get apps. But this situation does beg the question "do I need/want GApps on my NST/G"?
The set of user apps installed is pretty basic (see list in the linked installation post). Of those apps, many now do not work.
GMail never worked properly. It picks up mail fine (still) but only sends a few messages and then has to be reinstalled if you want to send more. There is no apparent fix as this is a known issue for the version in the package. The simple email client I use can send and receive GMail on demand but does not require GMail sync to be working. Others may be similar. However, GMail is needed to set up sync for other things, as described in the NTGAppsAttack post.
Calendar never synced properly. A search of the forum will reveal various other apps people have used with varying success.
Contacts will not sync. Well, there actually is no Contacts app. Apparently the resident B&N contacts regimen interferes. Again, a forum search will yield various apps people have tried in place of Contacts.
Google Talk may or may not work. You can sign in, but that may not mean much.
Google News and Weather, aka Genie Widget, has been dead for some time now.
Calculator works Of course you could probably just drop that apk into your system/app folder and reboot. No GApps needed. And there are other calculator apps out there.
Other than Market access, the whole reason to want GApps is the ability to sync with information on Google servers. There is still one thing that works: Google Books (1.2.2). You can't just install Google Books and expect it to work without GApps because in addition to the apps listed, there is a slew of other stuff involving accounts and sync that is also installed with the NTGAppsAttack.
So the long and short of it would seem to be that if you're not interested in Google Books (for as long as it continues to work), then you don't need GApps on your system. If you do want Google Books, then you need GApps, but certainly not all of it.
Since the demise of market access I have been slowly disabling parts of GApps that seem safe to shut down. My list may not be exhaustive, but it does leave me with a functioning system. To disable an app in system/app, use a root browser to rename the apk file. I chose to rename Calendar.apk to Calendar.OLD, etc. Anything will do. GMail and GMailProvider can be disabled once you have set up sync for Books.
Here's the list of GApps I have disabled successfully:

If you have disabled others without breaking the system, I'd like to know. Always better to quiet the system down instead of having apps trying to phone home to no avail.
