I am currently running the energy ics rom, but would like to go back to rooted stock. Would one of the two stock roms from the development forum be my best bet? I'm sorry for the noob question, I'm still a bit new to rooting android, lol.

Did you backup your current rig before you flashed the ICS ROM? Using TWRP, I do a full backup....then flash a rom, try it out, then flash back to my backup of the rooted stock rom....doesn't skip a beat.

Use the search button, or take 30 seconds and flip through the threads and you will find a tutorial. There are many out there...

Seriously? So flash the new rom you want. You don't need to go stock every time you want to change roms. If you are on dk28 and you don't have root just run the one click root with cwm.

Yeah I was just curious. I have been running the stock EC05 for about 2 days and there are ROMs all over place but I just want to flash something that is all stock stuff included. Thanks for the info guys.
I got curious myself so I gave xUltimate 2.2 a try and so far no problems.

Wrong section. Anyways Flashing this from CWM recovery is just fine. No issues at all.
This belongs in the q&a section but to answer your question the easiest way would be to use this rom

Wait for a proper ROM posted from the OTA 4.0.3 and then flash that. There is not a proper ROM posted yet. Do not flash any of what you see right now as you may loose the custom recovery and don't restore the nandroid from that thread.

I think it is better if we stick to cm7 until cyanogenmod releases its official ROM for nexus s because there are some good features in it which can not be found in any other ROMs

If you have a I9020T or I9023 model, flash the respective LATEST (2.3.6) official gingerbread flashable rom, then download the update to ICS.
However doing this will lose clockworkmod + root. Though it's not too hard to regain those privileges.

Yeah, this is the easiest way for GSM phones already using a custom recovery/ROM.
I just tries cm7 for the first time. Haven't even had it 24 hours. I was running liquid nexus bread and what a nice change cm7 is. Way smoother! Why rush for ICS? I don't get it....??!!
Stay rooted and wait for a nice steady well built ICS rom... JMO

so don't bust my balls here I'm trying to help my friend with his note and go back to Ginger bread but the problem I'm having is it has clock work recovery but when I use root checker it says it's not rooted nor will superuser work, how can this be? idk how he rooted it, so if anyone can give me any insight that would help, I've rooted before many times just never seen an issue like this.

Too many Bricked notes with stunner.
Go back to GB stock, root it and look for a different custom rom or stay on stock.

You can go back to rooted stock either like this

Sure but there's no need to say "TOO MANY" are bricked by Stunner. AFAIK, it's three people, of which only one reported a hard brick. It's ok to give opinions. It's lame to generalize, though.
PD: I'm on Stunner and have flashe every single release with no probs or losing root. People should read before flashing a device.
I have a Glacier that I rooted and put an ICS rom on a little while back. My fiance's phone recently died and I gave her the Glacier to go back to my Vibrant. Where I was able to appreciate ICS and enjoy it despite how unstable the ROM was, she really really hates it and now I need to revert back to Gingerbread. She wants stock, but I want to keep the phone rooted so I'm thinking something like CM or Ice-Glacier or something would be better.
Anyways, my question is do I need to do anything special to safely go back to a GB ROM from ICS?

nope, just do a full wipe including wiping /system (just for safety measures) and flash the Gingerbread ROM.
