I always thought CM7 was CM7, just different versions like RC, SR, and Nightly. does each one have different cherry picks or something?(the official and Euroskank)

The one posted above are knockoffs, the download the OS, modify it and call it there own.
Stable - Most stable, least amount of cutting edge add ins and features
RC - Mixed, stable most the time, with some cutting edge add ins and features
nightlies - updated frequently, has alot of the newest of the new, might/will be a tad buggy.
If you want CM7 run with Cyanogen's builds from their website.
if yo want AOSP, use Faux's build or Cyanogen.

I wouldn't say it's a knock off. They straight up call it a Kang and never called it theirs. I like it because they cherry pick certain things and actually add several thing that I like.

I switched from cm7 to royal Ginger 1.6. Very fast and responsive. Moving from screen to screen is quick. Apps load up fast. Actually i am having trouble using up my battery everyday before charging it at night. Sometimes it will last two days without needing to be charged. Coupled with faux's latest kernel Cfs lv I have not run into any problems so far. Signals are good and strong.

Im also giving it a try just out of curiosty.. Reminds me of SuperD by benbuchacher from his G1 days. Just wish it was updated to the latest CM Nightlies theres a lot of new features that I liked in nightly 54

I have to give that a try sometime. faux keeps releasing a new version every day...i am tempted. I have always been fan of pure google experience (and then customize on my own)

Don't really like questions like this but every rom is different. It is all personal preference. Your phone is different as well it may not like certain roms. You should do try out different roms to see what your phone likes best.

I think what is being asked here is not which one is better, because that answer would be based on opinion; the info sought here is what are the ups and downs of each ROM so he will know which one would be best for him.

The only way to know based on your own preference is to try them all. It only takes a few minutes to change roms. I suggest you try them all for a few days each ans go from there.
My personal preference is pure Google. I hate extra stuff. Some people need a little flavor so CM is great. Just try them all and make your own choice

I would say that is the best thing to do try them all... I'll be honest with ya out of the GB experience i like what Royal Ginger has done lately and the new Cm7 is really really stable good experience.. But i always and i mean always go back to Royal Glacier (mysense) i know i know.. but it's fast as hell in my eyes.... and i have ALL of my phones functions... anyways, to each his own..

There are several threads out there on this very subject already.
The "BEST ROM" is the one you like the best. It's very easy for us to tell you what we like on your phone.
Please use the one of the other threads to determine which you would like based on user reviews.

and to be completely frank about it. The most stable ROM is the ROM T-Mobile shipped the phone with everything else is a hack and slash of some sort. So there will be bugs and there will be FCs. Now our Developers do an AWESOME job at what they do, and i give them all mad props. But the most stable is the one the phone was shipped with. and it does have Wi-Fi calling.
Faux AOSP. With his newest kernel. Its amazing. Works with themes. Very stable. Wifi calling is perfect.

I like, and use daily, CyanogenMod 7.1.0 RC1, w faux123's kernel, and honeybread theme. Wifi calling works.
I REALLY liked faux123's AOSP ROM, but it was just a little to bland for my taste. Only tried his first 2 or 3 versions though. They were damn snappy.

Yeah I tried cm on my desire hd it was quite good but always went back to sense as I liked it, but in my opinion touchwiz is a bit more stock androidy feel to it rather than sense , so wanted to go all out and just try out stock android , so the cm rom, is it available yet? Obviously not stable I take it??
Oh I would also like to ask if someone can tell me is what's the difference between cm stable and nightly builds??
I think I can assume what stable means but never knew what a nightly build was??

Its not 'stable' yet for sgs2 in fact the first nightly only came out today.
Stable releases are known quantities I.e set milestones whereas nightly builds have commits added as they're submitted... nature of the beast some will fix stuff some might cause issues. Pot luck.
Stick with stable builds (there isn't one for sgs2 yet) if you want something rock solid without the occasional gremlin or two.
I quite like touchwiz but always run launcherpro so rarely bump into tw!

CM7 gives you a lot more configuratibility out of the box. Oxygen SplashMod is not so customizable, but it's much lighter, hence, definitely feels faster on first boot. It's really your decision to try both and choose which suits you. Both are well recognized ROMs across various devices.
My vote is for cm7..

The latest locally-built CM7 Nightly posted by ErwinP in the CM7 Nightlies thread includes a T9 Smart dialer I believe. And just FYI, the launcher in any ROM can be changed to anything you prefer.

In my opinion,Splashmod is more faster than CM7....
I tried the official CM7 stable Rom for wildfire, it is slow....May be it's because the optimization process is not include

cm 7.2 is best Rom right now present in market .
Another CM7 vote here - though I've tried several others... it might be one of those familiarity things though as CM7 was the first ROM I tried out
That said... now that the camera is working I'm going down the CM9 route
