I have experimented with lower screen densities on my SGS2. This makes much better use of the screen real-estate.
However, TouchWiz no longer fills the screen. Is there a way to alter the "height" of TouchWiz home pages?
There is a launcher.xml file in /data/data/com.sec.android.app.twlauncher/shared_prefs.
Does anyone have a list of valid options for this config file?

This may be a nitpicky thing from someone who barely posts, but I was wondering if there was a way to change the size of fonts in places like the settings menu from the smaller style like mikrom's uses back to the bigger size of the stock sense 1.0. I've tried font changing apps and lcd density but they make the buttons and borders way too big as well which makes everything ugly and overlap.
Any help would be great, thanks.
Not nitpicky at all. I interested in this also.
Is there any way to get Trebuchet to go full screen when in portrait orientation. I have like 1" of unusable space at the top and bottom of the screen. Any way to make this usable? I tried changing the number of icon rows, but that didn't change much.
This is full screen.
It is supposed to look like this.
One way for you would be to change screen's Dpi, but then maybe there would be problems with apps.

I went back to ADW for an 8x8 grid.
(The following applies only to the original TouchWiz launcher, modified to enable scrolling wallpaper.)
I've noticed this lately - TouchWiz will quite frequently ignore your specific scaling settings in whatever wallpaper app you're using and crop out parts of the left and right sides of the wallpaper so that you don't get to see everything in full. It even does this with its own default wallpapers! Here's the proof:
(Original wallpaper (pic reduced to half its original size for easier viewing).)
(How the leftmost and rightmost sides look on the default launcher, default 5-home-screen setup, using Samsung's own wallpaper picker.)
In case you're wondering, the amount of home screens has nothing to do with it. All adding more does (and from this 5-screen default you can only add 2 more anyway) is slow the scrolling rate down in order to display just as 'much' of the wallpaper as before.
Furthermore, I've seen it screw up the scaling in similar ways with programs like QuickPic, ES File Explorer, Wallpaper Wizardrii and what have you.
The only workaround so far that I've found to getting it to display the whole wallpaper without leaving bits off of the edges is by resizing the wallpaper's width to 1680 pixels (so for instance, 1680x1920) and using the "Image 2 Wallpaper" app from Google Play, telling it to not resize the wallpaper.
I'm hoping this is something that can be rectified by modifying the SecLauncher APK, or the SecWallpaper APK, or whatever. An alternative launcher shouldn't be the only solution really!
I dropped my phone. Now, one strip of the screen (where the address bar in Chrome is) is no longer responsive to my touch.
I've come up with a workaround: using Nomone resolution changer to lower the screen height to avoid the problematic screen parts.
This is not ideal because the app removes screen size from both the top and the bottom, so I waste valuable screen real estate. Is there any app or any way I can adjust the screen height from only the top and not the bottom? Alternatively, feel free to suggest other workarounds

You can change system DPI in build.prop.
Looking for the screen resolution to be smaller.
The font is set to small, actually looking for a tiny font.
In other words the screen fonts are to big, I guess.
Do I need to load a custom rom?
Thanks

you don't need a custom rom, you can update the displayDPI in your build.prop as long as you have root. You should be able to update the number to update the size of the elements on your screen, give it a quick google!
