What resolution/codec etc.. I'd like to convert to a file that will look good and play well with the default supported codecs.
Doesn't Gingerbread support a couple new codecs?

MPEG-4 Visual Simple Profile - .3gp & .mp4
Advanced Simple Profile Level 6 - .3gp & .mp4
H.264 High Profile Level 3.1 - .3gp
H.263 Profile 0, Profile 3 Level 70 - .3gp

There are enough players out there that support avi mode
Like arc player or mplayer native not but muh there are solutions

I don't think you need to re-encode your videos. Personally, I just use MX player. It supports almost all video formats. You can download the app for free on the Play Store.
+1 for MX Player.
Can't say I've found a video it won't play tbh.

Bs player works better for me. Mx sometimes degrades picture quality.

+1 for MX player. So far plays anything I've thrown at it.
1080p Anime MXV files no problem.
Only files I have had problems with were ones that were poorly encoded.
