just hit menu>wallpaper then select which one you want to use

Don't think that's possible. As I understand the Widgets are integrated in the Sense framework.

Either you are doing something wrong or you are using some crappy rom..
So you are choosing a lockscreen without notify bar and after your phone gets locked the notify bar is reappearing magically?? I seriously doubt that..
