Will a 3G SIM card work in the UK version HD2? The network is WCDMA UMTS 850/1900. I'm an absolute newbie when it comes to phone specs, so sorry if this is a stupid question.

If the network you're on has 850/1900 for 3G, then no, you will not get 3G on your UK/Euro HD2.

I heard that 3g does not work in the USA with the hero. But when i look at the specs for the phone(below) its like the exact same as the g1 (besides added 900 for hspa). So does 3g work in usa?

T-Mobile uses 1700Mhz, so that won't work. AT&T uses 850Mhz and 1900Mhz so that won't work.
The 850/900/1800/1900 MHz bands mentioned are for GSM. So Yeah GPRS/Edge will work.
My HD2 is compatible with the Network Bands:
HSPA/WCDMA/UMTS: 900/2100 MHz
GSM: 850/900/1800/1900 MHz
My Mobile Operator works only on:HSPA/WCDMA/UMTS: 850/2100 MHz with no GSM bands. The HSPA/WCDMA/UMTS 850 MHz has a better cover and is missing in my HD2. So I'm left only with the weak HSPA/WCDMA/UMTS 2100 MHz, wich sometimes is not enough.
There is any way to add the possibility to work also on the HSPA/WCDMA/UMTS 850 MHz?
I heard than there is a version of the HD2 in Telstra company in Australia which includes the HSPA/WCDMA/UMTS 850 and 2100.
No, you must buy the Telstra version if you want 850. Sorry for the bad news.

Does the Asian/Indian HD2 get 3G service on TMobile US or ATT bands?? I have an HD2 from India, and I've tried different radios but I can't seem to get 3G on Tmobile. One of my friends said that I should get 3g with Tmobile US because they support the 1800/1900 bands. No clue waht that means.

In different parts of the world there are used different radio frequencies for cellular phone networks.
Mostly used frequencies:
Europe :
HSPA/WCDMA: 900/2100 MHz
GSM: 850/900/1800/1900 MHz
Asia Pacific:
HSPA/WCDMA: 900/2100 MHz
GSM: 850/900/1800/1900 MHz
USA:
WCDMA/HSPA: 1700 MHz (AWS) / 2100 MHz
GSM: 850/900/1800/1900 MHz
Which frequencies are available depends on your selected carrier or provider, the used technique in the area and so on.

HTC provides different HD2 models: T8585 for Europe, T9193 for Asia Pacific and the T-Mobile US version.
The difference between T8585 and T9193 is the optimized radio chipset due to the region.

I'm planning on purchasing the HTC One S, I've been comparing some of the specs on the handset with other phones around the same price range and under the Network section, I can see that majority of phones have 1900MHz support under the 3G section or HSPA/WCDMA (Europe), the HTC One S does not.
I'm based in London, UK. Will I have any problems, how will this effect me? Does this mean the 3G network signal will be weaker than other phones?
