I'm stumped as to what has happened...
Basically been updating my ROM kitchen and now have done something that is stopping ActiveSync from working. What could I have done?

Well, would you believe it. It seems using HTC Volume Control 2012 caused the problem. Using 1920 resolved it....very strange......

Thats from the old HTCHome app. Not sure if you can install it on a Diamond, been VGA n all. But you have TF3D - much better than HTCHome...

Yup thats the one..what were your results for 1000 INSERTs.. it seems like it was cut off of your screen shot. Should be the first one on the list.

Weird nope... did you change your DPI?
you're gonna hate me for asking, but you restarted your phone already right?
also couple other things to try: force stop the dialer, and clear it's cache. Assuming you have the AT&T variant, because your sig has the AT&T SIII, try installing the OTA that was recently released. last thing i'd suggest is ODIN from the dump in the forums and that should for sure fix it.

I think, if you're looking for a high class screen protector, that is not included. You need to buy one for your own satisfaction.

pretty much from the day i got the phone. i keep disabling more and more things every other dayt to see what effect they cause
