Why don't just try a rom with a Sense 2.5 stock theme? And customize it to suffer your needs?

There are a few roms i liked, but no sense ui and some roms i didnt like but they have sense ui.
I have some limited knowledge about cooking rom and i want to learn if its possible to add sense ui in my custom rom and how? Also i want to learn why rom developers dont add sense ui in their roms? Is it hard for them or else?
