I understand that the contacts is from your gmail account, but what about all the contacts and numbers stored on you sim card? How can I access those?

There are two options.
Download the app called "any cut" from the market place and make your own speed dials.
or
use the voice dial app, or just down the call button to activate it.

is there an easier way to get multiple numbers for one contact together as one whole contact than having to do it manually. I'm sorry if im not clear. Someone called me, and I didn't have that number, I wanted to save it to existing contact, but when I clicked on save to existing contact, none of my sim contacts appeared. There wasn't a way to get to it either. I load all my contacts directly from my sim. Is there a way to move sim contacts to phone? or save current number to existing sim contact?

Go to "Start/Tools/SIM Manager
The program SIM Manager is what you are looking for. (May not be in this exact directory but it shouldn't be to hard to fine. If not installed then just search for it here or on google)
When adding contacts from a call in that manner....it defaults to your phone...not your SIM
You CAN move all your contacts from the SIM to the phone by using the program listed above. Also you can use that same program to move them all back to you SIM if you so choose.

SIM cards were never designed for those extra features, specially photos.
there's no easy way to save all the extra numbers and pictures of a contact into a SIM card, to use it on different phones, because every phone reads the data differently.
SIM cards only store contact names per single phone number, and your own phone number along with the carrier.

For that particular code you can install [email protected]'s "Phone Info" from the market.
Are there any apps available or options that will enable me to assign numbers to a specific sim card as the default?
I've installed my work phone sim into my OP6T and find it a bear to use voice call because it always asks for sim card to dial call with. I can go one by one and assign defaults but... there's gotta be an easier way.
I've found that long pressing allows you to assign in the original OnePlus dialer, not the ported Google dialer I was running. Now my issue is supporting voicemail/visual voicemail for both a metro and Verizon sim card installed.
Using the stock contacts app on my 6t. After I set up a contact, I can click on the 3 dots (by the edit pencil) and set a default sim for that contact.
