I have 8.1.0 rooted and I'd like to go back as far as I can go without root without twrp, everything stock if possible.

Are those for different devices (depending on carrier/region) or are those small updates between versions?
Also, Google claims OTA is easier and safer than Factory Images as in the above link.
Does it matter which is used?

Is there a way to downgrade my 6.0.1 Galaxy A5 2016 to Lollipop 5.1.1 ? I know the steps but I couldnt be sure that flashing 5.1.1 firmware directly from Odin will be okay.
Downgrade from stock 6.0.1 to stock 5.1.1 with Odin isn't possible.

Download the latest 5.1.1 Stock Firmware for your device from SamMobile website. Always download any unbranded Firmware. And Flash through latest version of Odin ( Follow the instructions).
Im using the Canadian version of the 6p and want to downgrade back to 7.0 and or 6.0.1. There are 4 or 5 different ones listed. Im currently on NPF10C.
There is no Canadian version. Use 6.0.1 MTC20L or 7.0 NBD90X. Those are the latest available.

I would not recommend dirty flashing.
Backup your stuff, and clean flash when switching major versions (ie. 7.1.1 to 6.0.1, etc.)
