Why can I replace the "settings.apk" the jelly bean by the KitKat, but I can not replace the settings.apk of Gingerbread by the Jelly Bean? Note: the 4 ROMs are CM (CM7, CM10, and cm10.2 cm11)

Why would you do it anyway ?
Gingerbread's Settings app uses a deprecated API which obviously won't work on any version other than Gingerbread.
As for JB to KK, it's because KK and JB 4.3.1 shares only a little bit of change so it CAN be used but it's useless anyway.

I just now saw Google nexus running android 4.1 jelly beans .. Used it for few mins.. It is smooth like butter.. Specially liked the notification pulldown options .. It is just an upgraded version of ics.. Couldn't record it as I was monitored by security camera :-(

I want to switch to a kernel that gives me a long battery life, because im going on a vacation and need my phone the whole day (if possible)
Can someone recommend me a kernel that would be the best for me? Without having to change the processors ?

I would like to know which is the "correct" guidelines for updating my phone.
Hopefully to the latest CM version.

At the top of about phone. Thr shld be a system updates tab. Go into it.

Ever since my switch to CM11, I miss three things about the S4 stock UI:
1. The corporate Email app is way better than AOSP Email
2. Better camera
3. Dialer. The mute and speakerphone toggles were really helpful!

In short, it sounds like I need a TouchWiz based ROM :-/
I have reluctance because the security enhancements in 4.4.4 also seem pretty important. I know Samsung hasn't released a 4.4.4 OTA yet, but are there any ports or 4.4.2 that at least have the openSSL and other security patches from 4.4.4 included?

From what I have read on here on the Google based 4.4.4 has been released, as I'm sure if the Touchwiz one was released there would be a run on new 4.4.4 Roms.
