turn off your data when phones on in use
it's the battery used by your radios
So when I look at my battery usage it says "tethering manager". Is this something of android? Cause I don't recall always having had this here. I'm on stock Android 2.3.5

This is an app your carried has placed on your phone to alert them whenever you activate native android wiring tethering in your wireless settings. The don't want you tethering for free so they placed this net nanny style app in your build of Android 2.3.5. There is a way to remove it. Do a search.
Any app to stop battery charging after 100% full even usb is connected to save battery life?
It is off, when it gets 100% charged then charging stops automatically.
After few minute the charging reach 100%, it will stop charge and then notify you to disconnect charger.
You need to wait few minute (~10 minute) for the notification to come out.

When the battery goes down to 15%, haptic feedback turns off by itself and I have to manually put it back on even after charging it again. This gets annoying after a while. What should I do? (i337)

Charge your phone before it gets to 15%.
Battery life is optimized when the charge is kept between 20-80%.

It's not charging itself.
The battery is just calibrating. The graph is not an accurate depiction of what is actually happening with the battery, but merely an estimation. Therefore when it feels it's "guessed" wrong it'll change.

To check whether your phone is charging or not, you can use my app Phone INFO ★Samsung★ >> USAGE HISTORY >> Charger Connect Counter and check if this counter increases...
No issues with the phone. Nothing that you should worry about. No need to do battery calibration either, as it is completely normal.
When you use phone actively, it consumes large amount of battery. Phone uses consuming data to show the battery percentage, however when you stop the "heavy usage", phone is then re-configuring itself to show the real battery percentage. Happens on pretty much all devices.
