Currently using the Defrost rom and it's the best. I do however like the dark theming of CyanogenMod 6. The dark messaging app specifically.
What files contain this information and how would i port it?
I think it might just be framework but not sure.

Well first thing is first.
Defrost is a rom built on AOSP, Leedroid is a rom built on Sense.
Defrost runs on Vanilla Android as in normal android, it is not a theme. Leedroid runs on htc's sense which is far more than just a theme itself.
So in short, no you can't they are completely different.
ok. i like the theme but not all the programs and that. is it possible to get something same of defrost?
Launcher2 is shipped with the Rom and many custom launchers are available in the market

I have been using CM6 Nightlies for a while now, and I have been lurking about in the theme section for a while, and I would like to know how I can theme my Cyanogenmod roms?
Is it a case of actually flashing themed roms instead of Cyanogenmod?
I know ADWLauncher (included in Cyanogenmod) can be themed independently, but I am still a n00b to themes so would like to know what the best options are!

TIP: Your first theme should really just be a mixing and matching of other themes to get use to the process.
TIP: d/l and look at other themes and see what the have done, using the same process below you can port and mash themes. To see what is themed go to the res/drawable-xxx folders and sorte the png's in there to newest at the top and you'll see what they have changed.
TIP: system/app/xxx.apk are where most apps that are themed are contained in these apks you'll find a res folder and in there you have a bunch of folders. you really on need to look in the drawable-xxx ones mdpi, no-dpi, land and so forth. these pngs make up the apps look and feel changing them will theme the app.

So I noticed that the theme chooser apk in Eclipse 3.1 does not theme some things that the apk in Blackbean or SmoothRom does. For example, camera and keyboard. Has anyone else noticed this? Does anyone know if it's possible to swap the apk between the ROMS?

Hi, I believe Theme Chooser is just the software that allow you to apply themes.
The actual modifications of the theme are in another apk that should be called "yourtheme.apk" or else.
So if you want to modify/swap images, do it in your "yourtheme.apk" not in Theme Chooser

yes, there is an exposed script to install themes, but it's not cm theme engine, which means the theme apps are not interchangable. you would use xtheme apks. these are starting to gain popularity. there was a while when cm said thney wouldnt be using their theme engine in new builds so xthemewas all we had, and people started porting themes over.

Is there a stock Android systemui.apk I can flash to make TW look like vanilla Android? Wanam can't fix some of it and my power menu, etc all still have blue backgrounds. Thanks!

Vanilla Android? It sounds like you want the powder blue Google /ASOP look. Transplanting AOSP system apps isn't going to work well.
You would be further ahead installing an ASOP themed TW custom ROM. Or otherwise theme your existing ROM. Or alternately install a full ASOP ROM.
